COOKING FOR GUESTS – EVENT ROUND UP!!

                                   Thank you for all lovely entries and really appreciate your enthusiasm to participate!

                 I accepted some single dishes like starters or a snack,though I wanted some complete spreads,ideas to cook for the guests! Please forgive me if I, have not followed my own rules or have been  lenient..Not worthy

          I could not post an entry through the event period,though I hosted thrice guests!! But sure I will post some in future…he he .. Big Grin

                     Prathiba of The chef and her kitchen, sent me “ Mysore Masala Dosa” with two different chutneys! Sure the guests will enjoy this menu!  Check out the recipe for a useful tip too!

SPONGE DOSA

           I simply followed the recipe from “100 Tiffin varieties” by Mrs.Mallika Badrinath. Its a long time wish for me to try this and today I tried and was satisfied with the results. There are so many sponge dosa recipes out there in the blog world,and here is another simple version!  It was too spongy and was good enough even when cooled down!

Next time I will try adding Vendayam/fenugreek seeds as in other blogs!! Angel,though it was very very spongy,I will try that for flavor!

INGREDIENTS:

Idly rice(parboiled rice) 2 cups
Rice flakes/aval/poha 1/4 cup
Sour butter milk 3 – 4 cups
Cooking soda 1/4 tsp
Oil & salt As needed

Sponge stack!

Method:

  1. Soak washed rice and aval  together in buttermilk overnight.
  2. Morning,drain the excess buttermilk if any and grind to a smooth batter like our idly dosa batter(bit watery than that)
  3. Mix salt(I added 2 tsp) and cooking soda and mix well.
  4. Heat the tawa (I used a nonstick one) and pour a ladle full of batter and drizzle oil and don’t spread the batter,cook covered in medium flame for a minute.

  5. Now super soft spongy dosa is ready to enjoy!

Serve with a spicy chutney,we had with coconut chutney ground with red chillies and a garlic! Was really yummy and we all 3 ate well Happy

Notes:
  • No holes formed in the dosa? Check the consistency of the batter,too thick batter or even too thin batter wont give you porous dosa. Try adding more cooking soda and mix well and try again.

EASY CHEESY PASTA

       This one is very easy to make,my hubby who doesn't likes pasta sauces, loves to eat pasta like this. I have used penne here,you can choose your pasta and try this. Any bachelor can try making this! Kids will sure love this too!!

Ingredients:(serves 1)

Pasta of your choice 3/4 cup
Butter 1 tblsp
Cheese spread 2 –3 tblsp
Pepper,crushed little coarsely 1/2 tsp – 1 tsp
Olive oil/cooking oil 1 tsp
Salt as needed

Method:

  1. Cook pasta with salt,cooking oil,till soft,as per the packing instructions. If you want the pasta to get cooked soon,soak in water for  1 hr and then cook.

  2. Drain the water and keep aside.
  3. Heat a broad pan and add the butter and just melt it in low flame.
  4. Add the cooked pasta and stir in the cheese and pepper.

  5. I used Amul Cheese spread with pepper in it,so I dint added pepper.

  6. Toss well till the cheese melts and blends well with the pasta.If you want bit juicy,you can add a tblsp of milk and mix.

  7. Serve hot!!
