Eggless tutti frutti cake

This post is very special for me,coz this is the first cake recipe I am postingParty…. My mom,MIL(also my ancestors)have never baked anything,also they don’t even know the ABCs of baking. So for me to I am just blank about baking…Last year by this time,I have not even dreamt of baking a cakeRolling Eyes! But now I find baking very interesting and even easier than my day to day cooking Cool! I too was once thinking baking is something I cant even imagine,its a very difficult thing to try…. But now I got enough confidence to even encourage someone who is scared of baking like I was onceRaised Eyebrow ! But I should really thank PrathibaBig Hug,for clearing all my silly doubts,regarding baking,when ever I asked her in the beginning!
I took the recipe from here,with few changes I tried and was keeping my fingers crossedNailbiting until I had a bite from the cake. It was damn good! My oven is a combination oven,which has three options- Convection/Microwave/grill. Basically I use the microwave option in everyday cooking. And the convection mode for baking cakes,cookies and pizzas…still I haven't used the grill option… I don’t even have the manual for this oven,some how just learnt the basics from online and managing to bake. Please feel free to write to me or leave comments,if you have any doubts regarding baking this cake, I will try my best of my knowledge to answer you what ever I know.
Tutti fruity eggless sponge cake

Eggless Tutti Frutti cake recipe

Continental    | Dessert
Prep Time: 15 mins    |  Cook time: 35 mins    Serves: 4

Ingredients

All purpose flour/Maida - 1 & 1/2 cups

Corn flour - 3 tblsp

Butter - 100 gms

Sugar - 4 tblsp

Baking powder - 1 tsp

Baking soda/sodium bi carb. - 1/2 tsp

Condensed milk - 1/2 cup

Soda water - 1/3 cup

Salt - 1/4 tsp

Vanilla essence - 1 tsp

Tutty fruity - 4 tblsp

Egg Replacer:

Water - 2 tblsp

Baking powder - 1/2 tsp

oil - 2 tsp


Beat well until smooth(I blended in mixer using the whip/inch option.. ,I am not sure if its the right way to do,but sure worked for me!)

Method

  1. Mix well maida,corn flour,baking powder baking soda and salt well,in a large bowl.
  2. Things needed
  3. I sift the flour to ensure even mixing.
  4. sift flour
  5. Soften the butter and beat it with sugar(I used fine grain sugar) in another bowl.
  6. beat butter,sugar
  7. Add the egg replacer,condensed milk and vanilla to the beaten butter & sugar and beat again till smooth. ( I used a hand whisker)
  8. beat well
  9. Add this to the mixed flour and mix well.
  10. Add it to flour
  11. Add the soda water and mix well.(fold well,folding-mix with a spatula/laddle in a same pattern,preferably from bottom to top always)I am not a professional baker,just now started baking,so if please ignore if there is any silly mistakes in the terms I have used in the method.
  12. add to the batter
  13. Meanwhile Preheat the oven to 180 degree C.Lastly add the tutti fruity and mix well.
  14. Add tutti fruity mix well
  15. Grease a baking tray with butter/oil(I used 6 inch round tray) and pour the mix in to the tray.
  16. Pour to pan
  17. Bake for 35 minutes(keep in centre of the oven) or until the cake is done, you can check by inserting a knife,if it comes out without sticking,clean then your cake is done!
  18. cool down on wire rack
Notes:
  • My cake was bit crumbly. I think there should be some proportion imbalance between wet and dry ingredients…
  • After cooling down also,the outer layer of the cake will be crisp and slightly hard.Keep it for a day and it will soften by itself! It stays good for 4-5 days!
  • You can use bread pan to bake or your preferred shape pan for this cake. I used a 6 inch round use and throw aluminium pan.
  • You can omit the tutti fruity and bake it, its the basic eggless sponge cake !
  • I used condensed milk,but as the original recipe calls for evaporated milk,so you can try that too increasing the sugar quantity…Please refer the link for the original recipe!
  • Follow the instructions and measurements and sure this recipe is keeper,go a head and try even if you are beginner like me  Happy
  • I used salted butter(amul) and omitted the salt.

After done,cool down in a wire rack and slice it and enjoy!

    Alternative for soda water you can try eno fruit salt(not the flavored) mixed with water,make sure u just mix it only when needed!

    I have a question..in ingredients there is corn flour..is it like flour of corn(corn meal) or corn starch(something like arrowroot). I am doubtful because in India corn starch is also sometimes called corn flour..and I have never used corn flour in cakes only corn starch at times.

    My MIL has the same model as you have,but I am so sorry you cant bake this cake in that mode. only if your oven has the covec mode,you can bake...This combi mode is the combination of microwave and grill mode.

  75. Hi sudha,egg replacer is nothing but the things we add in the place of egg,people who donot eat egg can use this proportion I have mentioned in any cake recipes. I found it in another blog...And this cake cannot be done in microwave or pressure cooker...only in a microwave oven with convection mode in it,you can make it. Otherwise you can make it in an OTG. I will soon post an eggless chocolate cake which you can try steaming. So stay tuned :)

  77. Hi , You should pre heat the oven to 180 degree C also bake at the same temperature. For any baking,preheat temperature and baking temperature is same(as far as I know)
    Usually if you set the temperature and start preheating,the oven will automatically set the time and stop/ gives a beep sounds after the preheat is done. Hope this helps..

  82. There is no such power setting in the convection mode,high or low power mode is only for micro wave(in my oven). Otherwise only you have to set 180 degrees in the convection mode.

    I baked this cake today and it came out really well. In fact, I used the exact measurements and it did not crumble at all.

    But I have a very basic doubt. When I baked the cake (or the last time when I baked the vanilla cake) the top kind of bubbled out. Now if I wanted to frost the cake, how is it done? Do we just cut off the top part to get it flat?

  98. Mamta, Middle rack should be fine to bake.Sorry for the late response...

    This egg replacer ingredients should be mixed first and added to the flour. And its always better to buy measuring cups to do baking. It will be handy. Or if you have kitchen scale, it could help. Or buy pyrex glass measuring cup, which has all cup measurements marked in it. Hope this helps....

    i said i have small baking dish which can have only one cup batter in it.since ur recipe shows 1 and half cul maida so how can i get 1 cup maida+cornflour proportions for all ingredients.plz tell me shall i cover the cake dish while baking or not.if yes than with wht thing should i cover it.

  100. Hi Ekta, you can half the measurements. Say for 1 & 1/2 cup flour you can use 3/4 cup and so on. Just bake this cake using half the measurements.

  102. Hi ekta, You can cover the cake whiel baking to get it evenly baked without a burnt top. Use butter paper for that. And I would suggest the aluminium dish the best.

  106. Hi your cake looks really yummy and delicious. Nice one. I have a small doubt can you clarify it. Ive also bake tutty fruity cake but with a readymade cake mix. It turned out well but all the tutty fruity stuck to the base of the cake everytime i bake. I mixed it well before baking but still it happens everytime, so can you tell me what should be done to make it in between the cake?

    Try greasing the pan first with butter and then sprinkle some flour,say one or two tsp of flour and spread evenly. Then pour the batter and try baking. After baking is done, keep the pan over wet cloth for 10 minutes to cool down and then invert the cake. Hope this will work. Let me know.

  108. Hi thanks for your immediate response. But my question was something different. The tutti fruity doesnt stick on to the bottom of pan but on the bottom of the cake. On your cake i noticed that it was on the middle of the cake. Hope you understand. Is there any tip on this?

  109. Oh, I dint read it properly, my bad :(

    actually try dusting the tutti fruity before adding it to the batter.That is before adding the tutti fruity to the cake batter, add a 2 tsp of plain flour to the tutti fruity and mix so that the flour coats the tuitti fruity well. Then add it to the cake batter.

    And I assume you are adding the tutti fruity at the end as mentioned in the recipe.

  111. Hi, I read these in some forums. But discussion was on 2008, so not sure if its still there. Still you can try there and in other Indian stores. Edison patel ,sabzi mandi - these were the places they had mentioned. Check this in baking section where they keep dry fruits. If you dont get tuitty frutti, then you can also try sunmaid mixed fruits. Though it has more of raisins, you can pick tuitti fruitti bits from that.

    Loved the recipe and tried it..it came out well...had a doubt and thought of posting it...the ingredients in the egg replacer will be the same irrespective of the number of eggs is is? I mean if the recipe requires 1 egg or 8 eggs I should make the egg replacer with the same measurements?

    1. The egg replacer is for one egg, so if it asks for two eggs, you have to double it as well.

    1. Preheating should be done until the baking temperature reaches. usually the oven beeps when the temperature reaches in mine. Check you manual for preheating procedure.

    1. I have a cup that measure 1/3 rd. If you dont have, Take 1 cup, divide into 3 and take one part from that 3 parts.

    I'm new to cooking..just now started to experience a lot of dishes from your list.don't know the basic of baking cakes,cookies or pizza.can you please help me out which is the best microwave oven to buy for all these purposes and also advise me about otg.
    First thing I notice is that before starting baking we need to preheat the oven to some particular temperature is that there is any time limit to set up with the temperature or it is just to preheat the temperature alone.

Hi I tried it yesterday for the first time and it come out well..tks for the wonderful recipe...am very fond of tutti frutti cake...now I can prepare my favorite cake on my own..tks once again..but I have a doubt my cake is very soft and tasty...but when I cut the cake into pieces it's broken..can you pls tell what mistake I did.

    1. Let it cool and be at room temperature for a day before you cut. This makes the outer layer soft and lets you cut easily. Dip your knife in warm water each time. This gives you neat pieces too.
