EGGLESS TUTTY FRUITY CAKE

Tutti fruity eggless sponge cake
               This post is very special for me,coz this is the first cake recipe I am postingParty…. My mom,MIL(also my ancestors)have never baked anything,also they don’t even know the ABCs of baking. So for me to I am just blank about baking…Last year by this time,I have not even dreamt of baking a cakeRolling Eyes! But now I find baking very interesting and even easier than my day to day cooking Cool! I too was once thinking baking is something I cant even imagine,its a very difficult thing to try…. But now I got enough confidence to even encourage someone who is scared of baking like I was onceRaised Eyebrow ! But I should really thank PrathibaBig Hug,for clearing all my silly doubts,regarding baking,when ever I asked her in the beginning!
I took the recipe from here,with few changes I tried and was keeping my fingers crossedNailbiting until I had a bite from the cake. It was damn good! 
                My oven is a combination oven,which has three options- Convection/Microwave/grill. Basically I use the microwave option in everyday cooking. And the convection mode for baking cakes,cookies and pizzas…still I haven't used the grill option… I don’t even have the manual for this oven,some how just learnt the basics from online and managing to bake. Please feel free to write to me or leave comments,if you have any doubts regarding baking this cake, I will try my best of my knowledge to answer you what ever I know.

Ingredients:

All purpose flour/Maida 1 & 1/2 cups
Corn flour 3 tblsp
Butter 100 gms
Sugar 4 tblsp
Baking powder 1 tsp
Baking soda/sodium bi carb. 1/2 tsp
Condensed milk 1/2 cup
Soda water 1/3 cup
Salt 1/4 tsp
Vanilla essence 1 tsp
Tutty fruity 4 tblsp

Egg Replacer:

Water 2 tblsp
Baking powder 1/2 tsp
oil 2 tsp
egg replacer
Beat well until smooth(I blended in mixer using the whip/inch option.. ,I am not sure if its the right way to do,but sure worked for me!)Tutti fruity eggless sponge cake

Method:

  1. Mix well maida,corn flour,baking powder baking soda and salt well,in a large bowl.
    Things needed
  2. I sift the flour to ensure even mixing.

  3. Soften the butter and beat it with sugar(I used fine grain sugar) in another bowl.

  4. Add the egg replacer,condensed milk and vanilla to the beaten butter & sugar and beat again till smooth. ( I used a hand whisker)
    beat well
  5. Add this to the mixed flour and mix well.
    Add it to flour
  6. Add the soda water and mix well.(fold well,folding-mix with a spatula/laddle in a same pattern,preferably from bottom to top always)I am not a professional baker,just now started baking,so if please ignore if there is any silly mistakes in the terms I have used in the method.

  7. Eventually preheat the oven to 180 degree C.
  8. Lastly add the tutti fruity and mix well.

  9. Grease a baking tray with butter/oil(I used 6 inch round tray) and pour the mix in to the tray.
    Pour to pan
  10. Bake for 35 minutes(keep in centre of the oven) or until the cake is done, you can check by inserting a knife,if it comes out without sticking,clean then your cake is done!
    cool down on wire rack
  11. After done,cool down in a wire rack and slice it and enjoy!
 the cake!

Notes:
  • My cake was bit crumbly. I think there should be some proportion imbalance between wet and dry ingredients…
  • After cooling down also,the outer layer of the cake will be crisp and slightly hard.Keep it for a day and it will soften by itself! It stays good for 4-5 days!
  • You can use bread pan to bake or your preferred shape pan for this cake. I used a 6 inch round use and throw aluminium pan.
  • You can omit the tutti fruity and bake it, its the basic eggless sponge cake !
  • I used condensed milk,but as the original recipe calls for evaporated milk,so you can try that too increasing the sugar quantity…Please refer the link for the original recipe!
  • Follow the instructions and measurements and sure this recipe is keeper,go a head and try even if you are beginner like me  Happy
  • I used salted butter(amul) and omitted the salt.

Wow, Raji. u have done a very good job( like an expert) Your cake is so perfectly done. That means you are a very good baker too. Kids would simply love to have cakes. Priya Soda water is plain soda/club soda... carbonated water you can say,its not sweet but very bit salty!

I tried getting the soda water in an Indian store, but they had only the sweetened soda water, Limca.
So, can u pls tell me the brand that u bought and what is it called?...Also, are there any alternatives for the soda water?

Priya I bought a brand called Schweppes,you can see in the first step picture....sure you can find in supermarkets,try and see,ask as club soda...

This method I am not sure though,
Alternative for soda water you can try eno fruit salt(not the flavored) mixed with water,make sure u just mix it only when needed!

Hello, Cake looks lovely!

I have a question..in ingredients there is corn flour..is it like flour of corn(corn meal) or corn starch(something like arrowroot). I am doubtful because in India corn starch is also sometimes called corn flour..and I have never used corn flour in cakes only corn starch at times.

Hi Namrata,its not corn meal,its corn starch(it will be white in colour),not the yellow one..Hope this had cleared your doubt!

Yes 350 F will be fine,I baked at 180 degree C... I had wrongly put 180 F its 180 C,I jus noticed,Thanks :)

I'm having LG micro combi model (micro, grill & combi). Can it be used for baking? if yes, what temp. should i set for baking?

Hi monsa,
My MIL has the same model as you have,but I am so sorry you cant bake this cake in that mode. only if your oven has the covec mode,you can bake...This combi mode is the combination of microwave and grill mode.

Your cake is too awesome n mouth watering once we look it.In ur receipe u've mentioned egg replacer,wat is that egg replacer n also tel me wether we will be able to do in a cooker because im not having microwave oven.

Hi sudha,egg replacer is nothing but the things we add in the place of egg,people who donot eat egg can use this proportion I have mentioned in any cake recipes. I found it in another blog...And this cake cannot be done in microwave or pressure cooker...only in a microwave oven with convection mode in it,you can make it. Otherwise you can make it in an OTG. I will soon post an eggless chocolate cake which you can try steaming. So stay tuned :)

Hi , You should pre heat the oven to 180 degree C also bake at the same temperature. For any baking,preheat temperature and baking temperature is same(as far as I know)
Usually if you set the temperature and start preheating,the oven will automatically set the time and stop/ gives a beep sounds after the preheat is done. Hope this helps..

1 tsp = 5 ml,1 tblsp = 15 ml

There is no such power setting in the convection mode,high or low power mode is only for micro wave(in my oven). Otherwise only you have to set 180 degrees in the convection mode.
