This post is very special for me,coz this is the first cake recipe I am posting
I took the recipe from here,with few changes I tried and was keeping my fingers crossed
My oven is a combination oven,which has three options- Convection/Microwave/grill. Basically I use the microwave option in everyday cooking. And the convection mode for baking cakes,cookies and pizzas…still I haven't used the grill option… I don’t even have the manual for this oven,some how just learnt the basics from online and managing to bake. Please feel free to write to me or leave comments,if you have any doubts regarding baking this cake, I will try my best of my knowledge to answer you what ever I know.
Ingredients:
| All purpose flour/Maida | 1 & 1/2 cups |
| Corn flour | 3 tblsp |
| Butter | 100 gms |
| Sugar | 4 tblsp |
| Baking powder | 1 tsp |
| Baking soda/sodium bi carb. | 1/2 tsp |
| Condensed milk | 1/2 cup |
| Soda water | 1/3 cup |
| Salt | 1/4 tsp |
| Vanilla essence | 1 tsp |
| Tutty fruity | 4 tblsp |
Egg Replacer:
| Water | 2 tblsp |
| Baking powder | 1/2 tsp |
| oil | 2 tsp |
Beat well until smooth(I blended in mixer using the whip/inch option.. ,I am not sure if its the right way to do,but sure worked for me!)
Method:
- Mix well maida,corn flour,baking powder baking soda and salt well,in a large bowl.
- I sift the flour to ensure even mixing.
- Soften the butter and beat it with sugar(I used fine grain sugar) in another bowl.
- Add the egg replacer,condensed milk and vanilla to the beaten butter & sugar and beat again till smooth. ( I used a hand whisker)
- Add this to the mixed flour and mix well.
- Add the soda water and mix well.(fold well,folding-mix with a spatula/laddle in a same pattern,preferably from bottom to top always)I am not a professional baker,just now started baking,so if please ignore if there is any silly mistakes in the terms I have used in the method.
- Eventually preheat the oven to 180 degree C.
- Lastly add the tutti fruity and mix well.
- Grease a baking tray with butter/oil(I used 6 inch round tray) and pour the mix in to the tray.

- Bake for 35 minutes(keep in centre of the oven) or until the cake is done, you can check by inserting a knife,if it comes out without sticking,clean then your cake is done!
- After done,cool down in a wire rack and slice it and enjoy!

Wow, Raji. u have done a very good job( like an expert) Your cake is so perfectly done. That means you are a very good baker too. Kids would simply love to have cakes. So, can u pls tell me the brand that u bought and what is it called?...Also, are there any alternatives for the soda water?
Priya I bought a brand called Schweppes,you can see in the first step picture....sure you can find in supermarkets,try and see,ask as club soda...

ReplyDeleteI have a question..in ingredients there is corn flour..is it like flour of corn(corn meal) or corn starch(something like arrowroot). I am doubtful because in India corn starch is also sometimes called corn flour..and I have never used corn flour in cakes only corn starch at times.

Hi Namrata,its not corn meal,its corn starch(it will be white in colour),not the yellow one..Hope this had cleared your doubt!

ReplyDeleteMy MIL has the same model as you have,but I am so sorry you cant bake this cake in that mode. only if your oven has the covec mode,you can bake...This combi mode is the combination of microwave and grill mode.

Hi sudha,egg replacer is nothing but the things we add in the place of egg,people who donot eat egg can use this proportion I have mentioned in any cake recipes. I found it in another blog...And this cake cannot be done in microwave or pressure cooker...only in a microwave oven with convection mode in it,you can make it. Otherwise you can make it in an OTG. I will soon post an eggless chocolate cake which you can try steaming. So stay tuned :)

Hi , You should pre heat the oven to 180 degree C also bake at the same temperature. For any baking,preheat temperature and baking temperature is same(as far as I know)
ReplyDeleteUsually if you set the temperature and start preheating,the oven will automatically set the time and stop/ gives a beep sounds after the preheat is done. Hope this helps..

ReplyDeleteThere is no such power setting in the convection mode,high or low power mode is only for micro wave(in my oven). Otherwise only you have to set 180 degrees in the convection mode.

ReplyDeleteI baked this cake today and it came out really well. In fact, I used the exact measurements and it did not crumble at all.
But I have a very basic doubt. When I baked the cake (or the last time when I baked the vanilla cake) the top kind of bubbled out. Now if I wanted to frost the cake, how is it done? Do we just cut off the top part to get it flat?

Mamta, Middle rack should be fine to bake.Sorry for the late response...

This egg replacer ingredients should be mixed first and added to the flour. And its always better to buy measuring cups to do baking. It will be handy. Or if you have kitchen scale, it could help. Or buy pyrex glass measuring cup, which has all cup measurements marked in it. Hope this helps....

Hi Ekta, you can half the measurements. Say for 1 & 1/2 cup flour you can use 3/4 cup and so on. Just bake this cake using half the measurements.

Hi ekta, You can cover the cake whiel baking to get it evenly baked without a burnt top. Use butter paper for that. And I would suggest the aluminium dish the best.

It turned out well but all the tutty fruity stuck to the base of the cake everytime i bake. I mixed it well before baking but still it happens everytime, so can you tell me what should be done to make it in between the cake?

ReplyDeleteTry greasing the pan first with butter and then sprinkle some flour,say one or two tsp of flour and spread evenly. Then pour the batter and try baking. After baking is done, keep the pan over wet cloth for 10 minutes to cool down and then invert the cake. Hope this will work. Let me know.
Hi thanks for your immediate response. But my question was something different. The tutti fruity doesnt stick on to the bottom of pan but on the bottom of the cake. On your cake i noticed that it was on the middle of the cake. Hope you understand. Is there any tip on this?

ReplyDeleteactually try dusting the tutti fruity before adding it to the batter.That is before adding the tutti fruity to the cake batter, add a 2 tsp of plain flour to the tutti fruity and mix so that the flour coats the tuitti fruity well. Then add it to the cake batter.
And I assume you are adding the tutti fruity at the end as mentioned in the recipe.

ReplyDeleteHi, I read these in some forums. But discussion was on 2008, so not sure if its still there. Still you can try there and in other Indian stores. Edison patel ,sabzi mandi - these were the places they had mentioned. Check this in baking section where they keep dry fruits. If you dont get tuitty frutti, then you can also try sunmaid mixed fruits. Though it has more of raisins, you can pick tuitti fruitti bits from that.
