eggless-chocolate-cake

One fine day, when we had my hubby’s friend at home for lunch,he bought brownies from ‘Famous Amos’ for us. People wont believe me if I say that was the first time I ever tasted a brownie in my life!!Dont tell anyone. That’s because I have no love towards chocolate and chocolate cakes and all those dark brown stuffs…I just hate them to touchSilly. But the instant I tasted those browniesHee hee,I fell in love with them and I crave for chocolate cakes and brownies now! Then when I was browsing through Sharmi’s Blog,I came through this post, and her intro to the cake –‘this tastes no less than a brownie’ and the looks of the cake pushed me to try,and I tried it in reference to the original recipe and came out super good! The good news is it has no butter and egg!  So I was again waiting for the opportunity to bake this and blog here…I baked this for a bake sale for a good cause in my Kid’s school…This recipe is very popular,I think few of our blogger friends have tried this before and posted too! Still this cake is a must in my blog as I am a beginner in baking.. I must say about the texture, its super soft, spongy and moist..A must try, simple to do yet yummy cakeDrooling.

Eggless chocolate cake recipe

Continental Dessert
Prep Time: 10 mins    |  Cook time: 35 mins    Makes: 12 pieces as shown in picture

Ingredients

Plainflour/All purpose flour/Maida  1& 1/2 cups
Coco powder(I used Hershey's)  3 tblsp
Sugar  1 cup
Oil (I used sunflower oil)  1/4 cup
Baking Soda  1 tsp
Lemon juice/Vinegar  1 tblsp
Water  1 cup
Salt  1/4 tsp
Vanilla essence  1/2 tblsp

Method:

  1. Pre heat the oven to 180 deg C.Mix the plain flour, coco powder and baking soda and sieve them to ensure even mixing.Keep aside.
  2. c1
  3. Mix water, sugar, salt and make sure the sugar gets dissolved and then add lemon juice/vineger,oil and vanilla essence and mix well.
  4. c2
  5. Add the sifted flour and mix well.Grease a baking pan with oil and dust with some flour, then pour the batter to it. (the batter will be watery)
  6. c3
  7. Bake for 35 – 40 minutes or until a toothpick inserted comes out dry. Mine got baked at 35 minutes.
  8. c4
  9. After done, cool down the cake for 10-15 minutes and then invert in a wire rack, let it get cooled completely and then cut into pieces.
  10. c6
  11. When I tried inverting the cake immediately last time I had some broken pieces,so this time I waited for some time and then invered the cake in wire rack..Dont let it cool down for more than 15 minutes.
  12. c7
  13. Cake is ready for the Bake sale!!I kept the pieces in the muffin liners and arranged it as below for the sale..
  14. c8

Notes:

  • If you are a beginner like me,donot experiment with the measures and ingredients, just follow it right and you will always get it right. Experiment with your own risk.
  • Baking powder is not equivalent to baking soda,so donot replace it.

Try this simple to bake cake yourself and let me know the results!

  51. Dear Raji,

I have been following your Blog for quite a while. Romba nanna irukku samayal kurippu.

Have not yet been succesful in baking cakes (tried a couple of times). Since I am a vegetarian, this Recipe was very handy. Thanks for the tips (watery batter, cooling time etc.,).

The Cake came out very well. Thank you very much.

I do not buy Plainflour. Neither do I have vinegar/lime juice/vanilla at home.

I used whole wheat flour and fresh yeast. Other than that, I just followed your recipe. I am very happy that the cake came out well.

  67. Hi Raji... I made this eggless chocolate cake using pressure cooker and the result was awesome... I first covered & heated the cooker with the cooker plate (the one with holes - this is to avoid direct heating) for 10 min.. then I baked the cake for almost 40 min in low flame. The cake was really delicious and my son had some two pieces in no time... i always had a feeling that i am unable to bake the cakes u post since i dont have oven but now i am happy that i made a home made chocolate cake that is so moist n soft in my cooker itself... thanks a ton for the correct measurement u had given... all smiles on my face...:-) my son asked for the chocolate icing which he loves... it would be gr8 if u post some frosting too... ;-)

Thanks for this recipe .. i tried this cake once it came out spongy as yours but in taste I could taste only baking soda.. it was way too much not sure why because I used exact same measurements as given.May be you have some other brand or something..only possible reason..:( I had to throw this cake away :( .. then I tried making similar recipe with soda water instead of baking soda.It went well and I m simply lovin' it !

  85. Hi Smitha,
You can use for sure. But it will be very thin, so be careful while carrying it after pouring the cake batter. Otherwise its safe to use in connectional ovens.

  86. Hi ...

I added the water, sugar and salt directly to the mixed flour then added the other ingredients. Please mention to mix water, sugar, salt and others in "another" bowl. i did the same mistake while baking vanilla cake. it will be helpful for beginners like me.

  90. Hi

I tried this chocolate cake recipe and it came out perfect except the above layer was quite crispy as i baked it for 40 min.

I wanted to find out if we could add tutty fruity to this chocolate cake recipe itself and bake as ur actual tutty fruity recipe demands addition of butter which i do not want to do. Will that work?

    ReplyDelete
  91. Hi jayashee,

Sure you can try adding tutti fruity and try the same. Just add it at last after mixing and give a gentle stir.

You can slice the top off if it is very crispy and next time, keep it overnight, the crispiness will be reduced...

  94. Hi

As i said, i tried the chocolate cake using tutty fruity. But this time the centre part of the cake did not cook at all inspite of baking it for 40- 45 minutes. Also the tutty fruity has settled at the bottom. I used a Borossil cake tray as i did last time.

Any idea what mistake i should have done. Need your advice pls. Earlier when i used to bake vanilla cake, i used have a deep round borossil dish and that time also my centre part never used to get cooked. Then i left the cake trial itself.

I have a IFB Microwave Oven 20 BC3 which all the the three opitons - micro, convection and grill. But i do not understand where iam going wrong.

    ReplyDelete
  95. Hi jayashree,

It looks like the problem is your baking pan. That is what common on ur both attempts... I am not saying this coz of that, but it is surely because of the pan as if your pan does not get heated evenly then the sides get cooked before the center part.

Next time try buying an aluminium pan(preferred) or may be a nonstick pan and try out, sure you will succeed.

line the aluminium pan with grease paper or apply butter and dust some flour, then pour ur batter. after baking let it cool down and then invert. Sure it comes out good...

Also you can try covering the batter on top with a grease paper. Just put it over the batter loosely and bake. This ensures even cooking of the cake without burning.

Regarding tutti fruity, I think this recipe's batter is too thin to hold the fruit....

    ReplyDelete
  96. Hi

Thanks for letting me know the problem. I will for sure try baking using an aluminium pan and will keep u updated

Can u pls let me know if i can grease the aluminium pan with oil and dust it with flour instead of butter as iam allergic to butter.

I also tried your paniyaram recipe and they came out so perfect and the taste was just like the restaurant ones.

Thank you so much for your prompt response.

I tried this recipe out today and was kinda huge flop :( The cake was tasting bitter!!!!! Do u have any idea as to what could have gone wrong?? I used exactly the same ingredients as u did but just that I used microwave for cooking the cake..but that shouldnt be changing the taste of the cake right :(

    ReplyDelete
  115. Hi Raks.
I have a Microwave convection oven. And I am quite new to baking also. I tried this recipe today. It was Ok. Not very good. What could be the problem????? Anyway will definetely try again. Thanks

  116. Hi Shweta and Sachu, this recipe is only for baking in convectional mode, not in microwave mode.
Shweta, I think when you do this in microwave mode, there are chances of getting burnt and turning out bitter, I hope that's y this could have gone bitter.

Sachu, please let me know why your cake was not good,so that we can figure out what could have been the problem...

  123. Super easy and rather tasty cake. I didn't bother to sift the dry ingredients beforehand. I just whisked them thoroughly in a separate bowl. I baked mine in a 9x13 inch sheet pam and sliced them into 1.25''x2.25'' rectangles. I trimmed the cake edges and got 24 perfect pieces. Thanks for this super quick and delicious recipe.

  124. hi raji i tried this cake today . corner of the cake was chewy . i baked it for 30 mins. i checked after 30 mins the knife came clean but when i cut it, it was little bit sticky on the knife. do i need to bake longer. i used square spring form. and i have another doubt how much 1 cup equal to grams. as u said the batter should be watery but for me it was not llike that then i adjusted the water. could you please reply it soon. i want to try it again because my daugter birthday comes in 4 days

    ReplyDelete
  125. Hi Jeya,

The temperature settings sometimes can vary upon the oven make and model, so if your oven is too hot it happens, try reducing 10 degrees than mentioned and try. You can also trim the edges after it cools down completely. 1 cup of each ingredient varies, so I recommend you to search online for the specific ingredient. My cup is US metric cup. So you can find it online easily. If not let me know, I can do it for you..

  136. hi Raji,
wanna share my experience with everyone.. yesterday i tried the cake and made it hard. today again tried and made it bitter. i didn't give up. i made it 3rd time and guess what i have done it well and good. it was soft and tasty. today my sister in-law's b'day was there .
she was so happy to see the cake and moreover the cake looked so mouth watery that she didn't even wait to light the candle and cut it right away.
when i told her my 2 hrs of battle with cake everyone had a good laugh at my home.
it became a memorable day for everyone.
    thanks

  144. Thanks a lot for the most simple and delicious chocolate cake recipe. Not too many ingredients and very well explained. My 8 and 9 yrs old sons have baked it so many times yet they still can't get enough of it. Within half an hour no crumb would be left. They want to learn to make icing for chocolate fudge cake to enjoy it with vanilla ice cream. have you got any?

  150. Hello Raji didi.
I have been wanting to bake since forever. And yesterday i got my OTG :D So, today i tried this cake. But my attempt was unsuccessful :( I have doubts on what might have gone wrong? I did do a few things that i think caused the cake to taste bitter in the upper part (crust) and the base didn't bake well. I preheated my oven as stated, mixed my ingredients properly (apart from the thing that i put sugar with dry ingredients by mistake and then mixed everything so maybe the sugar dint dissolve at all) and then kept it for said time. My toothpick came out neat, it lok beautiful, but it tasted..uhm not so good :( Help me?

  154. geetu,

Try putting one baking sheet (butter paper or parchment paper) before you pour the batter. It will sure help.

    Vaish

Sure it could be that the sugar dint dissolve at all. Try making again and use fine grain sugar and mix as mentioned, sure it will come out good. All the best!

Try adding some thick curd in your eggless cake. Using only 1/2 cup water and 1/2 cup curd, it will have very nice consistency.

  179. I am a regular follower of your recipes. I follow the exact measurements, it tastes yummm and my hubby praises me :) !!!

I have already tried baking 4-5 times.
First few times, I followed recipes from Mrs. Mallika Badrinath's book.
I used a glass vessel, 180 deg temp and it was done in around 35-40 mins.
I even tried with 200 deg temp and an aluminium container, and it all came out perfectly fine, moist and soft..

    >> Then, I saw this recipe and wanted to half it, and by mistake, I put the entire amount of sugar instead of half..
    >> Next, I tried substituting sugar with demerara sugar
    Did not succeed

    >> I then got sick of trying and followed the exact measurements mentioned here..
    Did not succeed

    >> Next, I tried chocolate cake with butter from some site..

All of them was a major flop show and with a heavy heart, I had to throw them all... :(
I baked with 180 deg, other time with 200 deg, with glass container, glass container on top of the stand..
With 180 deg, it never got cooked even after 45 mins
With 200 deg, centre did not get cooked even after 1 hour.
180 deg is the minimum temp..
Cake became chewy and rubbery :(

What could be the problem? Is the oven temperature not proper?
    Please help..

    3. My oven is also microwave convection one. So its the same. I have no idea what exactly is the problem. but once you decided to bake at a temperature, do not open in between until the cake almost gets baked.

  183. Hi raks,

Am one of ur regular follower. ur recipes are awesome and the idea of step wise pictures are really helpful.
yesterday i made this cake. the texture, crispness and all that came out really well. i followed the same measurements wat u have told. but still the cake was tasting bitter. i dont know how the bitterness came into it.

i have used baking cocoa. wat u ve mentioned is cocoa powder. is both are the same ? was dat problem cos of this alternation.

    thanks

    1. Baking coco must not be the problem, sometimes the baking soda/ powder if its not good, then bitterness might be there...
