I got a juicy flavourful ‘Dole’ pineapple from Fairprice, I enjoyed as such the cut fruit slices,but made juice for my kid and hubby… Instead of going for a plain juice I got inspired from a cookbook,but made it simple in my own way… Pineapple is always our family favourite fruit,always love the drinks with pineapple too..
Ingredients
| Pineapple | 2 slices |
| Lychee juice | 3/4 cup |
| Sugar | 2 tblsp |
| Ice cubes | 8-10 |
Method:
- Heat a non stick pan and sprinkle sugar in it. Place the chopped pineapple pieces in it and cook till the sugar caramelizes(turns brown) and pineapples are lightly soft.
- Add 1/4 cup water and bring to boil.Cool. In blender pour this and add lychee juice.(I used lychee juice drink here). Add ice and liquidize till smooth.
- Serve cold with a piece of pineapple garnished!If you want you can filter using a metal strainer!

ReplyDeleteI do not like to eat fresh pine apple,I always prefer canned one or caramelized one.I prefer pine apple in sheera,gojjus,juices n all,but I can never eat pine apple alone.I m scared of those thorns and it always spoil my taste buds,so never liked to it.But I do agree if it is cut carefully one can really enjoy pine apple.the juice looks refreshing and with lychee i nit I must say it would be amazing
