An excellent way to make kids eat the vegetables as snack. You can make the pre-preparation and freeze/refrigerate too.So this is a nice idea to use this as birthday party recipe. While making in bulk,its better to deep fry as pan frying will be time consuming.

Baby corn sabzi | Baby corn recipes

My kid has few favourite veggies,in that baby corn is one. So weekly once this will be in the menu for him . He loves baby corn sabzi with steamed basmati rice and simple yellow dal for his lunch. So here is the recipe for baby corn sabzi.

Baby corn sabji recipe

Recipe Cuisine: Indian  |  Recipe Category: Lunch - side dish
Prep Time15 mins     |  Cook time: 25 mins     Serves: 2

Ingredients

Baby corn - 12

Onion - 1,chopped

Tomato - 2 ,chopped

Capsicum - 1/2 ,cubed

Green chilli - 2 nos

Red chilli powder - 3/4 tsp

Coriander leaves - 2 tblsp

Turmeric - 1/8 tsp

Salt & water - As needed


To temper

Oil - 1 tblsp

Jeera - 1 tsp

Method:

  1. Cut the baby corn to your desired shape and boil it with salt and turmeric until done.

  3. Heat a pan with oil and temper with the jeera. Add onion and green chillies and fry till transparent.

  5. Add the cooked baby corn and red chilli powder and cook for 2-3 minutes.

  7. Add the tomato and capsicum and fry for 2-3  more minutes in medium flame.

  9. Top with coriander leaves and drizzle with some ghee if you want,gives a nice touch…

Notes

  • You can add finely chopped ginger along with onion if you like.
  • You can also pressure cook baby corn instead boiling.

Fry for a minute and transfer to the serving bowl. Serve as accompaniment for rice or roti .

Paneer jalfrezi recipe | With vegetables

I am trying this paneer jalfrezi recipe for first time and loved its simple procedure yet a yummy dish,I love it wrapped as Kathi roll,perfect idea for kid’s lunch box/snack box. Being paneer my kid’s favourite, this recipe has crunchy carrots,capsicum and beans too in it.So make its whole some when wrapped inside roti !! I love it because its tangy !!Yumm…

Paneer Jalfrezi recipe

Paneer - 200 gm

Carrot - 1

Beans - 8

Capsicum,small - 1

Tomato,firm - 1

Tomato puree(ground tomato) - 3 tblsp

Tomato ketchup - 1 tblsp

Ginger garlic paste  - 2 tsp

Red chilli powder - 3/4 – 1 tsp

Dhania powder - 1 tsp

Roasted methi seeds powder or add kasoori methi - 1/4 tsp

Lemon juice - 3/4 tsp

Salt - 3/4 tsp


To Temper

Oil - 3 tblsp

Mustard - 1/2 tsp

Jeera - 1/2 tsp

Curry leaves - A sprig


Kathi Roll with Paneer Jalfrezi

Method

  1. Thaw paneer,cut into thin strips and keep it immersed in hot water till use. Cut the carrots into diagonal slices and beans too diagonally as shown in the picture.Cut tomato into four,deseed it and cut into thin strips as well.

  3. Heat pan with oil and temper with the items given under ‘To temper’ table.

  5. Add the tomato puree,tomato ketchup,red chilli powder,dhania powder,ginger garlic paste and salt.(add kasoori methi at this stage if you are using kasoori methi. Just crush it in between ur palm and add)

  7. Fry for 2 minutes till the masala gets cooked.Now add the cut carrot,beans,fry for a minute.

  9. Add 1/4 cup water and cook covered for 4 – 5 minutes.

  11. The veggies should get cooked as well as it should be crunchy. Add methi seed powder at this stage.

  15. Lastly add Paneer and toss well in high flame.

  17. Cook for 2 minutes until the curry turns shiny.Add lemon juice and give a toss.

Notes

    • Changes I made to the original recipe are,I omitted methi seeds and kalonji seeds(onion seeds) in the tadka part. Also I added roasted methi seeds powder instead towards the end.
    • Original recipe asked for amchur powder,I had no stock so added lemon juice.
    • So if you can get the above items,you can try that too.

Mango ginger pickle recipe | Quick maa inji oorugai

I don’t like ginger at all, except Mango ginger/Maa inji. I tasted them only once and was amazed by its taste. No smell of ginger at all,not even 1%. It was tasting like mango,only that its crunchiness,texture was like ginger! I never got a chance to make this maa inji uruguai before. Last weekend got this pack of mango ginger in Mustafa and without second thought bought it. My hubby asked to make pickle out of it,so called my mom to get the recipe. It was very very simple.

Soya bean dry curry recipe | Soya bean recipes

My MIL made this once for me and I was surprised when I knew it was soya bean. Then every time when I go to Chennai,my MIL has a pack of this dry soya bean to pass it to me. I make this curry just like her or make it as a simple sundal with no onion or garlic. Love it either way and eat as such … I make this when I run out of veggies and the job gets easily done in the early morning,if you soak overnight, morning just have to pressure cook in a separate vessel when we keep rice and no cutting veggie part,we can easily make an accompaniment for rice. Club this with any rasam so its a perfect, comfort lunch box idea!!

Soya bean dry curry recipe

Prep Time: 12 hr soaking time    |  Cook time: 20 mins    Serves: 2

Ingredients

Dried soya bean - 1/2 cup

Onion - 1

Turmeric - 1/8 tsp

Salt - as needed


To grind to coarse paste

Coconut,grated - 2-3 tblsp

coriander seeds - 1 & 1/2 tsp

pepper - 1 tsp

Jeera - 1 tsp

Red chilli - 2

Garlic,small - 2

Water - as needed


To temper

Oil - 2 tsp

Mustard - 3/4 tsp

Curry leaves - a sprig

Method:

  1. Soak the soya bean over night,next day,drain water and pressure cook with salt and little water (1/4 cup). If you don't add salt,then the bean will get over cooked and get mashed.

  3. Grind the items given under the table ‘To grind’ to a coarse paste and keep a side.

  5. Heat a pan with oil and temper with the items given under ‘to temper’ table. Add chopped onion and fry till transparent. Add the cooked soya beans.

  7. Add turmeric and the ground paste and add 1/4 cup water and mix well. Cook for 6-8 minutes or until the water evaporates and the masala starts browning.Add a tsp of coconut oil for an extra flavour!

Notes

  • You can also try making the simple way like we do other sundals too..
  • This masala we grind is very very flavorful,while you grind you can smell it ,the whole house would smell while you make this curry!

Serve as accompaniment for rice or enjoy as such!!

Panakam recipe - Panakam preparation with step by step pictures and ingredients pictures too for easy understanding. Ram navami recipes!
Ram Navami / Rama Navami for this year 2011 falls on 12th April,Tuesday. With Rama Navami coming up, thought of posting the traditional recipe of the drink “Panakam” here in my blog.This is how my mom/grandma used to make and I used to enjoy this a lot in my childhood days. Perfect thirst quencher for this summer too,smells and tastes D-I-V-I-N-E-L-Y !!  I always love jaggery and pachai karpooram(edible camphor) combo in sweet pongal and also in this.. My paati  adds Thulasi(Holy Basil)  though, since I dint had I omitted in this recipe. In my childhood, the temple near our home gives pankam and neer more for free. Some volunteers will provide this on the day of ram navami, radha kalyanam or even when Thai poosam when the people pull ‘ther’(தேர்) around the streets near by…

Paanagam

Ingredients

Jaggery,powdered - 1/2 cup

Lemon - 1

Elachi/cardamom - 2

Dry ginger powder/sukku - 1/4 tsp

Pachai karpooram/edible camphor - A generous pinch

Salt - A pinch

Water - 2 cups

Thulasi/holy basil leaves - few

Nutmeg powder(optional) - A pinch



Method


  1. Click the picture to see enlarged for the ingredients.
  2. Dissolve the jaggery in water,to this,squeeze lemon,add powdered elachi,dry ginger powder,edible camphor,salt and nutmeg powder.

  4. Filter it using a strainer, add the thulasi leaves if desired and you can also add the skin of the elachi without discarding it,as it adds more flavour.

Serve chilled though tastes great as such!!

Eggless banana walnut muffin recipe

EGGLESS BANANA WALNUT MUFFIN
I have tried an eggless banana bread recipe before once,but always wanted to bake a banana muffin and vanilla muffin for a long time now. One fine day,got inspired after seeing this recipe,as it has no butter and used oil instead. So I had everything needed in hand,so just halved the quantity and tried immediately. Actually I dint expected the result to be so awesomely soft and spongy like this, I loved it to the core! I loved the walnuts very very much in the muffins…

EGGLESS BANANA WALNUT MUFFIN

Eggless Banana walnut muffins recipe

Prep Time: 15 mins    |  Cook time: 30 mins    Makes: 4 large muffins

Ingredients

Banana (I used dole, long variety) - 2

Plain flour/ all purpose flour - 3/4 cup

Walnut,chopped - 1/4 cup

Sugar - 1/2 of a 3/4 cup

Oil - 1/4 cup

Baking powder - 1/2 tsp

Baking soda - 1/2 tsp

Vanilla essence - 1/2 tsp



Method:

  1. Pre heat oven to 190oC. Take the peeled bananas in a bowl and mash it well with hands to make it a paste. Add oil,vanilla sugar to it and mix well. Keep a side.

  3. Mix flour,baking powder,baking soda in another bowl with a whisk.

  5. And after mixing properly make a dent and pour the banana mixture in the dent.

  7. Fold gently,do not over mix,just mix well so that every thing blends properly and don't beat,with 3/4 th of the walnuts added to it,reserve some for sprinkling on the top.

  9. Line the muffin tray with paper liners and spoon the batter in it up to 3/4 th of it. It will raise so much so make sure you leave room for it.Top with some walnut sprinkled over it.

  11. Bake for 30 minutes or until the toothpick inserted comes out clean and top turns golden brown.Mine got baked at around 28  minutes itself,so keep an eye after 25 minutes.


Enjoy the full soft and spongy banana muffins with the walnuts,the best part in it !!

Mixed veg paratha recipe

I always wanted to try this mixed vegetable paratha,and when I saw my sis in law’s post - How to make square parathas, I was way too tempted. So I tried to make square parathas with stuffing to suit my kids taste,with  spices and his favourite veggies. He loved it a lot and here after he wants ‘only’ square parathas!


Mix veg paratha recipe

Prep Time20 mins     |  Cook time: 20 mins     Makes: 6

Ingredients

Potato,small sized - 2

Frozen/fresh peas - 1/4 cup

Carrot and beans, finely chopped - 1/4 cup

Onion - 1,Finely chopped

Tomato - 1,de-seeded & finely chopped

Corainder leaves,chopped - 2 tblsp

Ginger garlic paste - 3/4 tsp

Fennel or cumin seeds - 1 tsp

Oil - 2-3 tsp

Salt - As needed

Turmeric powder - 1/8 tsp

Garam masala powder - 1/2 tsp

Red chilli powder - 1/2 - 3/4 tsp


For Dough

Wheat flour/Atta - 1 cup , heaped

Oil - 1 – 2 tblsp

Salt - As needed(3/4 tsp)

Warm water - As needed

Method

  1. Pressure cook potatoes cut in to 8 and peas with little water and carrot,beans with a tsp of water sprinkled,separately kept in another vessel.(for 3-4 whistles)After done,drain the water immediately in the potato and peel the potato skin and mash it along with peas.Also drain water from carrot,beans, if any left in the vessel.

  3. Make a soft n pliable dough,as we do for roti and keep covered.Use warm water to get soft dough.

  5. Heat a pan with oil and temper with fennel/cumin seeds and add onion and fry till soft. Add Ginger garlic paste and fry for a minute in low flame.Add tomato and fry for a minute,followed by carrot beans,Fry for a minute.Add turmeric,garam masala,red chilli powder,salt and coriander leaves and give it a quick stir in medium flame.

  7. Add the mashed potato and peas and mix well until everything blends and fry in low flame for 2-3  minutes.

  9. Cool down and make 6 equal sized balls. Make six equal sized balls from the dough as well.

  11. First roll a ball of dough as we do for roti and keep the stuffing in the centre.Fold from the left first and then from right as shown in the below picture.

  13. Then fold from above and then below to for a square packet.Dust the pack generously with maida and roll into square paratha. While rolling the paratha will tend to turn round shaped,but try to maintain the shape by rolling only in the corners in between to retain the shape.(This is what I call squareDont tell anyone)Heat tawa and drizzle oil and toast both sides in medium flame till golden spots appear.

Notes

  • Use your choice of vegetable,make sure to drain well the water in the cooked vegetables.
  • You can omit tomato and add lemon juice at the end too.
  • Roll and toast side by side, If you roll and keep,then it will turn sticky.
  • Perfect for lunch box,just wrap then in aluminium foil!
Serve with curd/dahi or any other raita of your choice.Yummy and flavourful!!
