1-eggless-blueberry-muffins

    I had blueberry muffins only twice. I am great fan of muffins. But not that often I bake muffins at home.  Every time I see blueberries at Fairprice, my hands reach it, but never bought it, thinking what I could do. This time decided to try muffins with it. Just made it with the basic Vanilla cake recipe and the result was soft muffins! Aj had it and liked it. He even took few to his last day of his term - party.

Ingredients (makes 10 small muffins)

All purpose flour/ maida 1 & 1/2 cup minus 3 tblsp
Blueberries 1 cup
Corn flour 3 tbslp
Plain yogurt/ curd 1 cup
Oil 1/2 cup
Sugar 3/4 cup
Baking powder 1 tsp
Baking soda 1/2 tsp
Vanilla essence 1 tsp

 

Method

  1. Pre heat oven to 180 o C. Sieve maida with corn flour twice to ensure even mixing. Mix curd and sugar in a bowl well. Add the baking powder and baking soda and let it rest for 2 – 3 minutes.1-muffin
  2. You can see the mixture now to be slightly frothy. Now mix oil and vanilla well to it. Add the flour one tablespoon at a time and mix well.2-muffins
  3. Wash the blueberries, pat dry it using kitchen towel/ tissue. Dust it with 1 or 2 tsp of flour(maida) and add it to the mixed batter and mix evenly.3-muffins
  4. Line the muffin tray with liners and spoon 3/4th of the liner with the batter. Bake for  18-20 minutes or until a toothpick inserted comes out clean.4-muffins

    Cool over a wire rack. Yummy muffins with a slight hint of tangy blue berries here and there are ready to enjoy!

  49. Yes I too baked in a combination oven but in Convection mode.
    But blueberry jam in place of blueberry i am not sure, you can use choco chips or tutti fruity or even raisins.

    wuld lik 2 share wid u that insted of bb fruit i hv tried out bb muffin with bb jam.usuing yr receipe ..it was my own expriement wid it... wich was super successful. it was as gud as outside bakery product.. only, comromise had to do was d colour of muffin as it turnedout little brownish.. it was my 1st eva try in baking muffins.. as i hv developed hobby in eggless baking recently.. next wanna tryout yr chocolate muffins. last 2-3 mnths hv tried veriety of eggless cake n so far gt complete success...wana check 1 mor thing is do u use low rack while bakin muffins??

  55. hi dear rak, i have a query. I have an unusual question regarding muffins and cupcakes in general. I bake mine in microwave wid convection mode at 180 dec celcius. When the muffins are right out of the oven, the crust is crispy. But with time the tops of the muffins and cupcakes go soggy and sticky. I make sure to cool them completely and store in airtight container, but still the top goes soggy. Please help!

    1. Usually that happens, like when its out from oven, it will be crispy but after a day, the top softens and shows up oily from the surface, but definitely not soggy. May be you can try cooling down and clicng wrap it. Are you keeping refrigerated?

  56. Looks very tempting Raji.. I surely want to try this out for my parents who are pure vegetarians.. I have never baked without eggs .. Can u pls let me know the measurements in gms since am not too comfortable with cups though I have the measuring cups.
