This is a very simple rice recipe perfect for using your leftover rice. Not that you can make it with the fresh cooked rice. This recipe is from a TV show I think. My MIL told the recipe over phone and asked to try it out, even she insisted to blog it here…:) So I had some leftover rice and tried this recipe today. The coconut and coconut oil used to temper adds a great flavour to this rice other than the flavor of garlic.

Ingredients (Serves 2)
| Cooked rice | 2 cups |
| Garlic (small variety) | 6-7 flakes |
| Coconut, grated | 2 tblsp |
| Red chillies | 8 |
| Salt | 1 tsp to 1 & 1/4 tsp |
To temper
| Coconut oil | 1 tblsp |
| Mustard | 1 tsp |
| Urad dal | 2 tsp |
| Jeera | 1 tsp |
| Curry leaves | 1 sprig |

My mil makes a similar rice using sambar powder and using garlic in the seasoning.Perfect use for leftover rice:)

Nice Wonderful recipe Raji which I tried today. I think i should reduce the no of chillis. Otherwise flavour and taste seems to be gr8. Last mouth after eating, felt like eating more. But was not there. :-(
