Rava-payasam
Rava payasam is made with semolina, sugar and milk – just few simple ingredients and an easy process, a yummy dessert is ready. I have not made this so far, but have tasted twice in restaurants along meals. It will be with less sweet and never used to like it. But when I was tempted by my MIL this time when she told about this payasam. She described what she had in mind in best way to tempt me enough to try. So I decided to try and post. It turned out delicious, I love sooji in all form, so I knew I will like it for sure. So here’s the simple rava payasam recipe. Perfect for get together as this gives a lot of volume.



Rava payasam recipe

Prep Time5 mins    |  Cook time: 20 mins     Serves: 4

Ingredients

Rava / Sooji – 1/4 cup

Sugar – 1/2 cup

Water – 2 cups

Milk – 1 & 1/2 cup or as needed

Cashew nuts -  6

Raisins – 12

Ghee – 1 tbsp

Cardamom – 1

Salt – 1 pinch


Method

  1. In a pan, add a tsp of ghee and roast cashew nuts until golden, keep aside. Add raisins and fry until it fluffs up. Keep aside.
  2. 1-roast
  3. Roast rava with the remaining ghee until fragrant. Do not change its colour. Then it won’t look good.
  4. 2-roast
  5. In a heavy bottomed vessel, boil 2 cups of water. Add salt, roasted rava gradually, stirring well. Cook covered in medium flame until soft.
  6. 3-boil
  7. Add sugar, dissolve it and bring to boil. Add milk and mix well.
  8. 4-cook
  9. Bring to boil, add roasted cashews, raisins and powdered cardamom. Mix well and switch off the flame.
  10. 5-ready

Notes

    • As it cools down, it gets thickened. So add lots of water and milk as needed.
    • Adding salt enhances the taste, otherwise tastes very flat.
    • You can add condensed milk and reduce sugar. Adjust sugar and milk as per your need.

Serve warm or even chilled, it tastes great both ways. I like raisin in this payasam the best.

  5. I have tasted same lk above, but it had a clove and kesari color to it.. It was Eye catchy n tasty, the clove adds more flavor
