jaggery-aval
Gokulashtami is nearing and if you are looking for easy recipe to offer on the day of Gokulashtami, this could be the perfect one. Though this is Gokulashtami special recipe, as a kid, I have eaten this for evening snack too very often. I wish I had made Aj to eat these kind of healthy snacks. Mom makes just by washing the aval (poha/ flattened rice/ beaten rice) and mixing it with powdered jaggery. But I just adapted making simple syrup by dissolving jaggery in water. Adapted slightly from here.  I loved the addition of edible camphor in this as it adds a divine smell to the poha and takes to the next level.

Vella aval recipe

Prep Time10 mins    |  Cook time: 5 mins     Serves: 2

Ingredients

Aval (flattened rice) – 1/2 cup

Jaggery (Powdered) – 1/4 cup + 2 tbsp

Cardamom – 1, powdered

Edible camphor (optional) – Mustard size

Salt – A generous pinch

Grated coconut – 3 tbsp


Method

  1. In a pan, heat jaggery and very little water just to dissolve the jaggery. Take care not to add more as it will make poha soggy.
  2. 1-jaggery
  3. Wash poha and drain water completely. Add edible camphor, salt and cardamom powder to it.
  4. 2-wash
  5. Add the dissolved jaggery  through a strainer. Mix well. Give half hour standing time.
  6. 3-add
  7. Mix in the grated coconut.4-ready

Notes

  • You can make it more rich by adding ghee fried cashews and raisins.
  • I used thick variety poha.
  • Adding salt will enhance the sweetness.
