Carrot modak recipe | Ganesh chaturthi recipes

carrot-modak-1Carrot modak is a delicious and easy modak made with carrot as main ingredient for stuffing. I have used grated coconut and raisins too. Very delicious and kid’s should love it with carrot. I had this in my list for this year’s Ganesh chaturthi 2016 recipes, so today tried it and when I tasted it, loved it a lot. Very easy with simple ingredients and procedure. You can try this for a change to the regular modak and kozhukattais.

Paan soda recipe | Paan drink

Paan soda with betel leaves, gulkandh, saunf, paan masala and plain soda as main ingredients. I hope many of you, after Janmashtami snacks and sweets need this to help you a bit in digestion. When I went to Salem this year, one day after shopping, we went to the food court in the shopping mall and thought of having something. To my surprise, I found my filter coffee picture and sambar idli picture being used there. My dad asked the guy in the shop, he told the graphics was done by some one else. When I told it’s from my website, he asked for the website address and told, later, if needed I can use everything if it’s available in my site Surprise. For free Striaght FaceRaised Eyebrow. They don’t understand perhaps!

But coming to today’s post, I found this paan soda in their menu and ordered. It was really flavourful and  delicious. Everything was well balanced. I just loved it but could not guess the ingredients. There was a pleasant smell in the drink, which I could not recreate. I adapted this recipe from Tarla Dalal’s paan shot recipe and made it as soda. It was really good and flavourful, was not the same as I had there but. If I get a chance to taste again, let me see if I could crack it and if I do, I will update. I have used the dark green betel leaves (Karuppu vetrilai) here.

Thattai with peanuts | Puzhungal arisi thattai recipe

Crispy, tasty and addictive thattai/ thattuvadai with peanuts to add extra flavour. When I posted puzhungal arisi murukku, I thought I should try the same way for thattu vadai too. So few days back tried this one. I wanted to add peanuts and curry leaves as we get it in the shops. This one is bit time consuming as we need to grind rice using wet grinding method and it takes a bit of time. So if you want you can adapt my easy thattai version with rice flour and adapt this recipe to make peanut thattai.

Paneer kheer recipe | Easy Indian desserts

Paneer kheer, an easy dessert with the ingredients available at home. Yet a rich sweet to serve in special occasions and festive occasions. I have not planned to try this, but saw in an old cookbook I had. Since it was simple and easy, I thought I will give it a try. I have tried it with ready made paneer we buy frozen, but you can do it with homemade paneer too. It turns out really good. Both me and Vj loved it. This could be helpful now during Janmashtami. Tutti frutti cookies recipe - Eggless tutti frutti cookies

Eggless tutti frutti cookies with the colorful tutti frutti in it, which looks like gem stones beautifully in the cookies. Not only it looks appealing, this one tasted also great. Aj loved it a lot. So this is a perfect snack, be it back from school snack or inside their snack box. I got a small box of tutti frutti in Singapore, which usually we don’t get. This is the second time I am buying in Mustafa. I got it during Christmas and I had to use it up as it will expire soon. I finished half the tutti frutti adding in Maida cake when I made for my MIL for India trip. I wanted to try this tutti frutti cookies for sure this time, as it was my long time wish to try after tutti frutti cake. I saw many bloggers posting, but I could not get my kind of recipe. Saw this recipe and adapted to make this tutti frutti cookies. I had a plan to make my sugar cookies as tutti frutti, but this recipe excited me as it had the orange flavor in it. I thought using orange zest is a great idea in cookies, especially I thought tutti frutti and orange flavor will go with each other well. And it really worked out, both me and Aj loved it. I am always a big fan of orange in biscuits (I love the IKEA orange thins, sadly which I could not find it anymore here) and also orange flavored chocolates. So this is a treat to me. Do try this out for your kids and let me know!

Orange peel rasam recipe | South Indian Rasam recipes

Orange rasam flavoured with orange peel. An unique flavoured rasam that goes well with rice and good to have as such too. I wanted to try this when my Co sis sent a recipe. Her recipe had orange juice, but the day I wanted to try, I had only the peel in my hands, never thought juice would be needed. So I adapted the recipe from here and tried this method. It was very flavourful with the orange peel. Never thought it would turn out so refreshing and appetizing rasam. Do try when you have orange peel with you. Very easy with just one step extra from the regular rasam. You can adapt your own rasam recipe and use this idea too.

Thengai paal sadam recipe | Coconut milk rice

Coconut milk rice or thengai paal sadam, packed with flavours, cooked in masalas and coconut milk.
I have tried a similar ones few months back, but it was too heavy for me. I thought I would try again and alter the recipe to post, but did not try. I got this recipe from a reader friend (Rama Sindhia). When she sent a picture for my tried tasted album, I liked her rice very much. So asked her the recipe. She was sweet enough to send me the recipe soon. Today I tried it and loved the flavors a lot. I could not follow the exact method, the original recipe calls for, but I used all the ingredients same to recreate the flavour. I had it with mixed vegetable kurma and it was really good.

Thengai paal sadam recipe

Ingredients

Basmati rice – 1 & 1/2 cup

Onion – 1

Green chilli – 1

Tomato –1/2

Coconut – 1 cup

Coriander leaves – 2 tbsp

Salt as needed

Ghee – 1 tbsp

To grind

Cashew nuts – 5

Garlic – 5 flakes

Ginger – 1 inch piece

Cashew nuts – 5

Fennel seeds/ Soambu – 1 tsp

Cardamom – 1

Clove –1

Star anise – 1/2


Method

  1. Soak basmati rice for 10 minutes. Grind the items under ‘To grind’ table with little water to a smooth paste.

  3. Extract coconut milk by grinding coconut with luke warm water.
  4. Thengai paal sadam recipe 2
  5. Squeeze and strain the coconut milk. Measure and keep aside. Heat a small pressure cooker with ghee. Fry onion and green chilli for just until onion just turns transparent.

  7. Add the ground paste and fry until ghee separates and raw smell goes off.

  9. Add tomato and little salt. Fry until soft. Add rice and fry for a minute.

  11. Add coriander leaves, salt and mix well. Pour in the coconut milk and water, so that all together you add 2 cups liquid.

  13. Bring to boil and mix well. Close with the lid and put the flame to low. Cook in sim for 14 mins or give 2 whistles in medium flame (refer notes). Once done, give a gentle stir to fluff the rice.

Notes

  • You can reduce the coconut milk by using 3/4 cup coconut too.
  • I can put my flame to really low flame. If you cant, just leave for two whistles in medium flame. But you may need to add 1/4 cup more water.

Serve hot with any kurma, we had with mixed vegetable kurma. You can try with tomato kurma too.

Dry fruits rava dosa recipe

Rava dosa made with dry fruits and nuts like cashews, almonds, pista, dates, tutti frutti, raisins. I heard this for the first time when we had our dinner at Hotel Sangeetha at Chennai. Everything was really tasty there. Though it was crowded, it was worth waiting for a while. I forgot what we had, but this one was really fancy and tempting for me that catch my attention. I always love kashmiri naan, so this one also I expected would be nice and tried it. I have tried with my instant rava dosa recipe, but you can adapt my soaking version rava dosa or your own rava dosa recipe and just add these dry fruits and nuts. Kids would definitely love this. I like it on sweeter side, so added dates, raisin and tutti frutti more. I never saw or tasted this dosa when we took this for take away for my BIL, so I made it with my imagination. Next time I should try this dosa and see how it is in the restaurant. I am not sure if the dry fruits and nuts are mixed in the batter or sprinkled on top of the dosa, but I mixed with the batter. Also not sure about adding onion. I thought it will be nice without onion, so avoided it. Do try this for your kids as evening snack, it will be quite filling for the hungry kids after school. Also it will be fancy for them Happy.

Sojji appam recipe | Sojji appam with jaggery

Sojji appam is a sweet dish like a poori made out of maida, stuffed with sweet rava/ semolina/ sooji stuffing. The sweet stuffing is made with jaggery and coconut (optional). There are few other version too, made with sugar, without coconut and so on, but this is the one I saw in a magazine attachment recipe booklet. I had this recipe under my to do list for few months now. But kept postponing because of all the maida, sooji and deep frying thing in this recipe. But recently saw sojji appam in the show Sutralam suvaikalam Madurai special and got tempted by it. Though it was made with just plain rava & sugar mix, I wanted to make this one with jaggery.

I guess we can make kesari and stuff in this maida poori. This one was similar to the chana dal pooranam, except this is with rava instead of chana dal. It was really really tasty and flavour was beyond my expectation, ofcourse, any high calorie food will have to be tasty right? Winking. We cannot avoid but at least eat in moderation and enjoy such food. Original recipe is this, but many of you will be sure concerned about the calories – make it with wheat flour, tawa fry it instead deep frying and make all your own modification. Taste may definitely differ but good, it’s up to your preference.
