Pasta payasam recipe | Pasta payasam with jaggery

Pasta payasam with jaggery
Payasam is a traditional south Indian sweet/ dessert, mostly made with jaggery and rice based or with dal. But when pasta got introduced in south India, many people tried payasam with it. Pasta got various south Indian make overs. My MIL also uses it in poriyals like the one I have posted – Cabbage poriyal with pasta. My FIL always keep saying, how it will be when we make pasta in paal kozhukattai style. So I wanted to make pasta with jaggery as payasam. Two things we have to make sure while making pasta payasam for best taste is, first choose tiny pasta shapes and second, make sure to cook the pasta extra soft. Cheap pasta varieties works best as it is thin and gets cooked faster, blends well too.

Methi papad ki sabji recipe

methi-papad-ki-sabjiMethi papad sabji is a flavourful accompaniment for rice or roti with fenugreek seeds and urad dal papad as main ingredient. I had this during our Pune Marriott stay. This was one of the item in their menu Ghar ka khana. I could not believe it was methi seeds in the subji because it was just like any other legume/ dal. I had a doubt how come methi can be this much tasty and without any bitterness. So decided to try on my own. I referred Chef Harpal Singh’s video, but partially adapted it and adjusted the recipe according to my taste preference. When I was cooking this one, Aj told it was really flavourful. I loved it with roti. It had a very mild bitterness. But I guess you can remove it completely by pre cooking the methi seeds, washing the methi seeds before and after cooking and then proceed with the recipe.

Easy and quick to whip up, microwave eggless fudge mug cake. I had few Toblerone chocolates lying in fridge for long time to finish and have this recipe also in my to try list for a while now. So made use of both and made this microwave fudge cake. This is very easy to prepare, quick fix for your chocolate craving. Though it’s a mug cake, two people can share this one as it’s quite sweet. Learn how to make soya chunks kurma, a south Indian flavoured gravy with soya chunks in this post. I started loving soya nuggets which is also popularly known as soya chunks or meal maker, when I tasted first time in my hostel canteen (not mess) in mix veg kurma. It used to taste really awesome. But none of my family members like it, so I avoid buying and making it after I started cooking. Sometimes I will feel like having soya chunks kurma. But who will make for my sake? So avoid it. I  make my soya chunks curry. I love that.
I wanted to try this style of kurma for long time now, will be thinking to add some soya chunks in my regular mixed veg kurma too, but since I will be making in morning, I will not be able to take extra care for this soya chunks and add it to the kurma (I like soya chunks only soft and with out that bland boring smell, so I make sure to pressure cook, wash and then use in the recipe). Some say adding milk while cooking soya chunks can also take out the smell, but I have not tried that. This pressure cooker method always works for me. It makes the soya chunks super soft, which makes it to absorb all the masalas too and get blended well. This is an awesome combo for chapathi and parotta. So do try it out at home. A healthy and delicious gravy for roti and parotta.

Jackfruit appam recipe | Jackfruit sweet paniyaram

Jackfruit appam or Jackfruit sweet paniyaram is called Gaarige in Tulu . One of the traditional Mangalorean dishes during the monsoon season. This is a recipe sent to me by a reader friend Sahana. I wanted to post it during Ganesh chaturthi itself, though late, I did not want to miss this recipe. So tried it with the jackfruit left over after trying Jackfruit payasam. Thank you so much for sharing this traditional recipe on How to make this Gaarige. Many of us are familiar with manglore buns, this one is so new and relatable to our sweet appam/ paniyaram. This has to be traditionally deep fried. I chose to use my appam pan/ paniyaram pan. So it’s upto you to decide on which method to choose. I have not seen this in many places in this blog world, who ever posted has done it as gaarige, but it is very very similar to the nei appam, banana appam, so I thought this should be easy for everyone to interpret. Jackfruit payasam recipe | How to make Palapazham payasam

Jack fruit payasam is one of the most delicious and flavourful payasam I have ever had. With Jackfruit, jaggery and coconut milk as main ingredients, the payasam has few ingredients I am using for first time in payasam. Actually last year, for Onam I posted rice ada payasam. This year too, wanted to post some recipe for Onam. I wanted to try it out a recipe that is authentic, Kerala way – the chakka pradhaman. But then ended up in making this one which I saw from Samayal Samayal show by Venkatesh bhat. I liked the way he made this payasam, though I am not sure that’s how it is made authentically in Kerala, but it was simple and impressive. I added ingredients like sukku/ Sonth/ Dry ginger and roasted cumin seeds powder in this payasam, which I have never tried adding in a payasam. When I was making, I was not sure about the end result, but when I tasted after finishing, I was so happy that I tried this Jackfruit payasam. Vj too loved this one. After making Mango payasam, this is the second fruity Payasam that I am trying, but mango payasam was more like paal payasam with mango in it, but this one is purely made with Jackfruit as main ingredient. Though I have seen authentic pradhaman recipes use thin coconut milk and thick coconut milk, this short cut method I have used only thick coconut milk.I have used readymade coconut milk, as I knew Jackfruit flavour will be dominating in this payasam.

Vendhaya keerai sambar recipe

Vendhaya keerai sambar is simple sambar with methi leaves (vendhaya keerai), made similar to the keerai, just give it a sautee and make sambar. I have never tried this so far, so have been doubtful if it would taste bitter. But it was not at all bitter. I guess since we use tamarind and the sambar powder for spice, it turns out without bitterness dominating in this. I guess in South Indian households, we use the methi leaves with just 2-4 leaves in the plant, unlike the North Indian households, which uses a more matured plant leaves of methi. I have always used the more matured plant of methi than the younger ones. Nevertheless the sambar turned out yummy. Usually, when ever I get a pack of methi leaves and palak leaves from Mustafa, Vj gives a look, at times asks – why these?  Coz, he is not a big fan of these. I make mostly methi thepla, rarely aloo methi.  But this time, he himself asked me to buy and try making sambar. I am glad I tried, its really tasting good and very healthy too, which Vj also will eat.

I found a reason to post this as it is Vinayagar chaturthi tomorrow. This is diabetic friendly kozhukattai. As I posted all sweet versions, thought of making this one for a change. For regular rice upma kozhukattai, we add some dal, either toor dal or moong dal, but this one just really simple with the dal only used in tempering. Pasi paruppu pooranam kozhukattai (payatham paruppu/ yellow moong dal) is a flavourful pooranam kozhukattai, with yellow moong dal. My mom told this that they also make pooranam with moong dal instead of our regular channa dal pooranam. Though we make chana dal pooranam usually, this time thought of trying out this modak. I tried with less quantity, but this time I am going to make this same moong dal mothagam for the festival Ganesh chaturthi 2016 celebration too. It was same like the chana dal pooranam except for the flavour. We don’t roast chana dal for our kadalai paruppu pooranam, but mom asked me to roast the pasi paruppu for best flavour. Javvarisi kozhukattai recipe | Sago kozhukattai

Javvarisi kozhukattai is really easy and delicious kozhukattai with sago (Tapioca pearls/ Sabudana), stuffed with a simple coconut, sugar and cashew nut mixture. This was a recipe shared by one of my classmate friend and I had no idea, how it would look or taste. My friend Roselin shared this as a rough recipe. So I googled to find this video same as what she told. So I confidently tried and it came out perfect! She asked me to try with more smaller sago, but I had only black pepper sized sago with me. She suggested me to run it in mixer once. I did the same, so if you have chance to get smaller sago, no need to pulse the sago, just make it as such. I liked it’s texture and looks a lot. It was soft, wobbly, shiny and transparent with a pearly look. Vj too loved this too. I am sure this can be an wonderful snack too.

Honey kozhukattai (தேன் கொழுக்கட்டை) is made with wheat flour as main ingredient. I have seen this in the cook book by Ramani chandran that my mom passed to me during marriage. It had been handy for many everyday recipes during my initial stage of learning to cook. Today I got courage to give it a try. I was bit in doubt until I tasted it. It was really tasting great to my surprise. I guess this is an age old traditional recipe forgotten these days. I am not sure, but I have not seen this else where in the internet. I am so glad to try this and introducing you all this oneBlushing. Since it is made with wheat flour, do try it out and sure everyone will be amazed by its taste.
