Special vegetable masala dosa recipe (Restaurant style)

I had this vegetable masala dosa when I visited Hot chips restaurant here in Singapore. The masala was very different from the usual one and to my eyes I could only see the vegetables cabbage and carrot grated with rich masala. I just love it very much and I know I am going to try it out very soon and I did. My kid too loved this one,definitely I am going to make this often as we eat veggies along with our regular dosa!

Vegetable masala dosa recipe

Recipe Cuisine: Indian  |  Recipe Category: Breakfast
Prep Time: 15 mins    |  Cook time: 15 mins    Serves: 4

Ingredients

Cauliflower,carrot, beans and cabbage - 2 cups all together

Pav bhaji masala - 2 tsp

Biryani masala or garam masala - 1/2 tsp

Salt - as needed

Turmeric - 1/4 tsp

Milk - 1/4 cup

Oil - 2 tblsp


Method

  1. Heat oil in a pan and add the cut vegetables. You can add 1/4 tsp of sugar while sautéing to keep the veggies crisp and colourful. Fry for 2 minutes.Add turmeric,both masala powders and salt.

  3. Give a quick stir.Add milk and cook covered for 2 minutes.

  5. Mix well till oil separates. Transfer to the serving bowl.

(OLD VERSION)

Ingredients:

Ingredients for MASALA filling:

Cabbage and carrot(grated) - 1 & 1/2 cups

Salt - as needed

Oil - 2 tsp


Masala to grind:

Coconut - 1/4 cup

Cashews(optional) - 5

Garlic flake - 1

Green chilli - 2

Fennel,soambu - 3/4 tsp

Cinnamon - 1/2 inch piece

elachi,clove - 1 each


The masala filling

Method:

  1. Grate the veggies and grind the items under ‘To grind’ table with little water to make a thick paste.Heat a pan with oil and fry the carrots first for a minute or two in medium flame ,followed by cabbage and salt and fry for two minutes in low flame.
  2. Grindsaute veggies
  3. Add the ground masala and fry in medium flame till the raw smell goes off.You can cook covered to ensure even cooking of the veggies. Add oil if needed.Sprinkle water if needed.Usually the water in the ground masala is enough,but if you feel you need more water you can sprinkle little,but at the end the masala should be a semi dry one.

  5. Make thin dosa,drizzle little oil and keep the stuffing in the middle and fold as shown in the picture,to make a triangle. If you are not comfortable in making this shape,you can just fold simply as we do for the usual masala dosa(semi circle form).Click on the picture if you wish to see larger.

Serve hot with coconut chutney or chutneys of your choice!

Notes:
  • I didnt add cashew nut,its optional,it gives a rich taste,so you can make it for your special guests 🙂
  • The whole garam masalas can be of your choice of combination. You can omit one or add one of your choice…
  • I didnt grate the veggie,instead cut them,but in the restaurant they’d grated the veggies.
  • You can fry onion along with the veggies.

Paneer tikka is my kid's favorite starter. This recipe uses sour cream / hung curd and other spices as marinade. I have made this few times now in oven and sometimes I make in tawa too.. I got this recipe from a cookery show in Discovery Travel and Living.. Its sounded very simple yet very delicious paneer tikkas. The spiciness level of this recipe is mild. Perfect to make for a party as starter,oven method makes it simple,when you make in bulk and also the pre-preparation can be very well done and kept in advance for this recipe..The chef in the show added only yellow chilli powder(yes,you heard it right,its yellow!!),black pepper and ajwain along with cream. But I have just added few more according to my taste..

Paneer tikka recipe

Recipe Cuisine: Indian  |  Recipe Category: Starter
Prep Time 15 mins + 1 hr marination time    |  Cook time: 20 mins     Serves: 4

Ingredients

Paneer - 200 gms

Sour cream or hung curd - 2 – 3 tblsp

Red chilli powder - 1/2 tsp

Turmeric powder - 1/8 tsp

Chat masala - 1/2 tsp

Crushed black pepper - 1/2 tsp

Tandoori masala powder(optional) - 1/2 tsp

Lemon juice - from 1/2 of a lemon

Ajwain/omam - 1 tsp

Salt and oil - As needed

Capsicum (I used 3 colours),cubed - 3/4 cup

Onion ,cubed - 1

Tomato (optional) - 1 deseed,cubed)


Method

  1. Thaw the paneer and cut them into bite size pieces. Don’t cut the cubes too big as the marination won’t get infused inside the paneer.

  3. Mix the sour cream,all the powders ,lemon juice,salt ,ajwain and a tbsp of oil to marinate the paneer pieces.

  5. Marinate the paneer pieces,make sure you coat each and every piece,keep refrigerated atleast for an hour. (You can also marinate capsicum, tomato and onion too.

  7. When you are ready to make, grease the skewers and a pan. I used aluminium foil to wrap a wire rack and arranged the skewers over it. You can prick the foil in various places to enable the water drain as it gets roasted. Pre heat the oven to 250o C. (my oven has only 230o C as maximum,so you can bake at 230o C too,the outcome was gud). Arrange the paneer,capsicum and tomato in the skewers as shown in the picture. Brush them generously with oil.

  9. Bake them for 15- 20 minutes or until the edges of paneer starts browning. Turn in-between once.

Notes

  • Using metal skewer is recommended,as I used wooden skewers,it got burnt though not totally,it just turned black,otherwise no complains about it.
  • Just bake till the panner starts browning in the edges. If you over bake the paneer will turn rubbery.
  • If you have paneer tikka masala powder,just mix it with curd and omit the powders,also note that it has salt in it too..
  • For hung curd just hang 1/4 cup of curd in muslin cloth for an hour.
  • You can follow the same recipe and make it tawa too. You can skew the paneer in skewers and arrange in hot greased tawa, cook over medium flame. Turn so that all the sides get cooked. As it gets cooked, will get loosened and turning might be difficult, so use tongs to turn carefully without breaking the paneer.
  • Update: Soak the wooden skewers in water for atleast one hour before baking,which prevents burning of the skewers..Thanks friends for the suggestions :)
Once done,again brush them with oil (optional) and serve hot with green chutney and sprinkle some chaat masala and lemon juice over the paneer tikka and enjoy!

USING THE GRILL OPTION IN OVEN

In case you have grill option in oven,you need not set the temperature. Just choose the grill option and start the oven, with the grilling pan/pan inside it,it will start preheating and once done it will give a beep,then arrange the paneer in the pan and just set the time for 13-15 minutes. Your paneer tikka is ready.

USING MICROWAVE/GRILL COMBINATION OPTION IN THE OVEN

If you are using this option,you need to be careful with the vessel you use for baking,you have to use only the vessel/tray meant for it. You cannot use aluminium foil as its combination mode of microwave too. So choose the tray and choose the right option. My oven has 4 options in this combination mode, to choose for different kind/types of food. So you have to check yours for what has to be chosen. I have not personally tried this option still. In this option also the oven has its default setting for temperature. So just have to set the time.

Oats idli that is perfect for breakfast, one of the tasty and healthy Indian oats breakfast recipes! Step by step pictures! I wanted to try instant oats idly for a long time. I used to make a version of this before,by adding a oats as major part in the rava idly,but when I saw the Instant oats idli at sharmis passions,they looked very tempting to try, moreover, I wanted to try goduma rava idli too,and this recipe is a double treat for me as it combines both. I love this recipe very much and this tastes very similar to the usual rava idly,more healthy undoubtedly! I made variations a bit to suit my taste buds and convenience..

Instant Oats idli recipe

Ingredients

Oats(I used quick cook) - 1 cup

Wheat rava (godhumai rava) - 1/2 cup

Curd - 1/2 cup

Grated carrot - 2 tbsp

Water - 1/2 cup +more if needed

salt - As needed

Eno fruit salt - 1/2 tsp

Lemon Juice - from 1/2 of a lemon

Green chillies,finely chopped - 2 

Chopped coriander leaves - 1 tbsp

Chopped ginger - 1 tsp


To Temper

Oil - 1 tblsp

Mustard - 3/4 tsp

Urad dal - 1 tsp

Channa dal - 1 tsp

Curry leaves - 1 sprig


Method:

  1. Dry roast Oats for 3 minutes in medium flame until nice aroma comes.Powder it coarsely after it cools down.

  3. Heat a pan with oil and temper the items in the table ‘To temper’ ,followed by the veggies u decided to add and ginger,green chillies,coriander leaves. Give it a quick fry and add the wheat rava and fry for a minute in medium flame.

  5. Transfer to mixing bowl, add oats,salt,curd,lemon juice,water as required and make a batter,which consistency is similar to our idly batter.(neither too runny nor too thick). Mix well. Add Eno fruit salt just before making idlies and mix well. This will give you a frothy/airy batter which gives a soft spongy idly.

  7. Pour the batter in a greased idly plate and cook just like you cook the regular idlies but for more time,say 10-15 minutes,until done.

Notes

  • I used quacker quick cook oats,you can use any kind of oats and follow the same process
  • I added carrot and sometimes also green peas,you can use the veggies of ur choice and its optional too.
  • Add a pinch of cooking soda if u dont have eno fruit salt.
  • U can use the regular rava also..
  • Adding ginger and coriander leaves gives a great flavour to the idlies.
  • You can adjust the curd quantity.Accordingly adjust water quantity too.
Serve hot with any chutney of your choice.

Sutta kathirikkai chutney recipe | Side dish for idli dosa

I love one of the chutney they give in ‘Murugan Idly Shop’,not sure what chutney is that,but once when we went there with my In-laws and asked my FIL any ideas about the chutney,he told its brinjal chutney. I really love that flavour of mustard and coconut in that chutney. The only sole reason for me going to Murugan idly shop is that chutney,yummy! I always find chance to try that chutney at home and recreate the taste.. I have tried only very few time and still trying… I took a lovely,pretty looking aubergine(brinjals always look lovely and pretty for me😁) to try this chutney. I tried smoking the brinjal directly in the stove and tried this chutney. Since I smoked it,the smoky smell was dominating this time than the mustard or coconut in the chutney. So I thought next time I will try microwaving or boiling. Still,this smell was very unique and good too, my hubby who doesn’t like brinjal(he can eat if its not in its texture) like this very much as the brinjal is ground and only the smoky smell was dominating than the brinjal smell.

Sutta kathirikkai chutney recipe

Ingredients

Big round brinjal/Aubergine - 1 no.

Red chillies - 7 – 8 nos.

Tamarind - 1/2 tsp,tightly packed

Mustard (big variety) - 3/4 tbsp

Coconut,scraped - 2 – 3 tbsp

Asafoetida - 1/8 tsp

Salt - As needed

Coconut oil - 2 tsp

Curry leaves - 1 sprig


How to make sutta kathirikkai method:

  1. Brush/apply oil over the washed brinjal evenly everywhere. Pierce a rod to the brinjal and roast it in direct flame every where evenly. You have to rotate the brinjal now and then for even roasting. Keep the flame in medium always.
  2. cook in direct flame
  3. After the skin of the brinjal gets blackened and the brinjal gets cooked completely remove from fire and cool down.(the pierced rod will not hold the brinjal anymore after the brinjal gets cooked,so you can take it as reference point)

  5. Peel off the skin,if you have roasted evenly and the brinjal is done cooking,then removing the skin will be very easy. If not cooked well,the skin will not come that so easy.

  7. Roast mustard and red chillies until mustard splutters.Add the coconut and give it a stir till nice aroma comes.
  8. 4roast
  9. First grind the red chillies and tamarind and then add brinjal,coconut,mustard,salt and just give it a spin. The mustard should be just ground in to one and two.Add required water while grinding.
  10. 5grind
  11. Heat oil and season with curry leaves and asafoetida and mix well. Serves best with Idly or dosa.

Notes

  • I have just added what ever I saw/thought that was in the chutney served by murugan idly shop. This will only taste good with idly dosa and may not be good with rice.

One fine day,when we had my hubby’s friend at home for lunch,he bought brownies from ‘Famous Amos’ for us. People won't believe me if I say that was the first time I ever tasted a brownie in my life!!🤫. That’s because I have no love towards chocolate and chocolate cakes and all those dark brown stuffs…I just hate them to touch🤭. But the instant I tasted those brownies😀,I fell in love with them and I crave for chocolate cakes and brownies now! when I was browsing through Sharmi’s Blog,I came through this recipe, I tried it in reference to the original recipe and came out super good! The good news is it has no butter and egg!  So I was again waiting for the opportunity to bake this and blog here…I baked this for a bake sale for a good cause in my Kid’s school…This recipe is very popular,I think few of our blogger friends have tried this before and posted too! Still this cake is a must in my blog as I am a beginner in baking.. I must say about the texture,its super soft,spongy and moist..A must try,simple to do yet yummy cake🤤.

Eggless chocolate cake ingredients

Plain flour, Maida - 1 & 1/2 cups

Coco powder (I used Hershey's) - 3 tbsp

Sugar - 1 cup

Oil (I used sunflower oil) - 1/4 cup

Baking Soda - 1 tsp

Lemon juice/ Vinegar - 1 tbsp

Water - 1 cup

Salt - 1/4 tsp

Vanilla essence - 1/2 tbsp

Step by step preparation of eggless chocolate cake recipe :

  1. Pre-heat the oven to 180 deg C. Mix the plain flour, coco powder and baking soda and sieve them to ensure even mixing.Keep aside.

  3. Mix water,sugar,salt and make sure the sugar gets dissolved and then add lemon juice/ vinegar, oil and vanilla essence and mix well.

  5. Add the sifted flour and mix well.Grease a baking pan with oil and dust with some flour,then pour the batter to it. (the batter will be watery)
  6. Step 3 eggless chocolate cake recipe
  7. Bake for 35 – 40 minutes or until a toothpick inserted comes out dry. Mine got baked at 35 minutes.
  8. Step 4 eggless chocolate cake recipe
  9. After done,cool down the cake for 10-15 minutes and then invert in a wire rack,let it get cooled completely and then cut into pieces.

  11. When I tried inverting the cake immediately last time I had some broken pieces,so this time I waited for some time and then invert the cake in wire rack. Don't let it cool down for more than 15 minutes.

Notes:

  • If you are a beginner like me, do not experiment with the measures and ingredients,just follow it right and you will always get it right. Experiment with your own risk.
  • Baking powder is not equivalent to baking soda, so do not replace it.

Lemon oats recipe | Easy Indian oats recipes

This is perfect for the lazy,lemon lover, me 😐..Could be made in jiffy and enjoy it hot! Perfect for bachelor cooking too! We all know the benefits of oats, I have been eating oats for quite few years,though not consistent,but when ever the weight management thought comes in me. Well,that comes every month,😆but I like oats,I can eat everyday for a meal(break fast/lunch /dinner) for a 4 or 5 days ,but after that I get bored of it. Then forget for a while,then again… goes on and on …🤐 I can say this is perfect for making in a hurry and taste also suits the Indian taste buds. Tangy, spicy!

Lemon oats recipe

Recipe Cuisine: Indian  |  Recipe Category: Breakfast
Prep Time: 2 mins    |  Cook time: 10 mins    Serves: 2

Ingredients

Quick cook Oats - 1 cup

Lemon - 1 no.

Turmeric powder - 1/8 tsp

Salt - As needed

Water - 1 & 1/4 cup


TO TEMPER

Sesame oil - 1-2 tblsp

Mustard - 3/4 tsp

Urad dal - 1 tsp

Channa dal - 1 tsp

Ground nut (optional) - few

Curry leaves - 1 sprig

Asafetida - 1/8tsp

Red chilli or green chilli - 2


Method

  1. Heat a pan with oil and temper the items as in order. Fry till the mustard splutter in medium flame.Add the water,turmeric powder and squeeze the lemon,mix the salt. Bring to boil.

  3. Add the oats and mix well.Cook covered for 3 minutes in medium low flame.

Notes
  • You can increase the water amount and make the consistency of your preference,I like mine to be like this,so used less water.
  • Also change the water quantity if its not quick cook oats..
  • Make it only when you are going to eat,if it gets cooled down,it wont taste that good, you cannot blame me for the taste
Serve hot,you can top with sesame oil if you want…

I use sesame oil for vatral kuzhambu,puliyogare,lemon rice and these kind of tangy dishes. Oats normally have a dry texture,I prefer to eat only in form of poridge or just make it greasy with sesame oil like this. Sesame oil has so much of health benefits,it has tendency to increase the good cholesterol,so which will help to keep the cholesterol in control. It is also rich in anti-oxidants. So don’t be afraid to use this in cooking. You can use generously…
