Aglio Olio, is a simple pasta recipe which is nothing but Angel hair pasta cooked in olive oil flavored with garlic and spiced with the red chillies. Once when I ordered this from ‘Pasta Mania’, I loved the simplicity of the ingredients and loved the taste the best of all pasta dishes. It is a treat for those who doesn’t like the usual pasta tomato sauce.

Try this easy and simplest pasta recipe and you will be amazed by its taste. The fragrant from garlic along with red chilli,infused in olive oil is quite good in this..
Notes
Transfer to the serving plate and enjoy hot,if you want you can even top with parmesan cheese. But its quite great as such!!

Aglio olio pasta recipe

Ingredients
Angel hair pasta - 1 small bunch
Garlic - 4 flakes
Red chilli (fresh) - 3
Olive oil - 4 tbsp
Salt and water - As needed

Method:
- Boil pasta in enough water with salt and little bit of olive oil, until soft and cooked.(or as per the cooking instructions given in the wrapper)
- Drain the water and wash in tap water to prevent sticking.
- Chop garlic finely(mince) and chop the red chillies in to thin circles.
- Heat a pan,add olive oil(do not let it fume) and add the chopped garlic and red chillies.Keep the flame in lowest.
- Just give it a stir and add the cooked pasta,sprinkle some salt if desired.
- Stir well in medium flame for 1 – 2 minutes. That’s it, we finished making aglio olio!!






Notes
- Using olive oil is best for this recipe.
- Try topping with parmesan hard grating for a cheesy twist.
- I used extra light tasting olive oil.

can we use spaghetti instead of angel hair? would it still be good?
ReplyDeleteI had used Spaghetti to make this a long time ago. I had followed the recipe written from some Italian cookbook. It said that adding a few drops of oil while boiling the pasta will prevent it from sticking to each other and we shouldn't rinse/wash the spaghetti as it will wash away the starch, making sauces harder to stick to it. I added some mint too and lots of garlic! It was awesome though! :D
ReplyDeleteNice presentation. I love this one from pastamania. When I make it, I always add Italian herbs at the end to the pasta and toss it. The garlic, olive oil and herbs make a deadly combo!

ReplyDeleteI ve been meaning to make this at home from the time I tasted it at Pastamania in Singapore... exactly the recipe I had in my mind... thought of fresh ground black peppers instead of red chillies though.. looks yummM!
