How to make cold coffee, easy cold coffee without ice cream

Cold coffee is an easy drink, treat for coffee lovers with easy ingredients available at home. Am not a big fan of coffee, except for cold coffee. I am big fan of cold coffee. As a hot drink, I don’t like to have coffee, I will taste but. I love coffee flavor. It smells so heavenly, so I love to prepare coffee. I love all coffee flavored desserts like coffee flavored cake, candy, toffee (coffee bite), or any drink.
I am big fan of my mom’s and MIL’s coffee flavor. Even while they make the coffee, it smells so sweet. I would say till date, my mom’s and MIL’s coffee tastes best and haven’t tasted anything better than that so far. To be more specific, I loved coffee more after marriage as I started giving importance to learn how to prepare it. As Vj is used to take coffee every morning, I always wanted to recreate my MIL’s coffee.
Initially when I moved here to Singapore, I would almost forget to make decoction and make it only after attending Aj. Slowly I started loving the process of making coffee, like an art. Every time I make coffee, I would taste it to see if it is like my MIL’s coffee. I used to ask Vj. I have come a long way in making coffee, still I would love to prepare it with fresh cow’s milk or at least aavin milk and see how it turns out.

Cold coffee recipe

Recipe Cuisine: Continental  |  Recipe Category: Drink
Prep Time: 10 mins    |  Cook time: 0 mins   Serves: 2

Coffee (decoction)* – 1 tbsp

Milk, chilled – 1 & 1/2 cups

Sugar, powdered – 2-3 tbsp or as per taste

Ice cubes** – 4

Chocolate sauce – 1 tbsp

Fresh whip cream – 2 tbsp (optional)

* I used fresh decoction, you can prepare with 2 tsp instant coffee powder + 1 tbsp hot water.
**I used coffee ice cubes for strong taste.

Step by step method

  1. Add milk, coffee, sugar and ice cubes in a mixer/ blender. I used whipping blade attachment, you can use regular blade too. Blend well until frothy (1-2 minutes)

  3. In a serving glass, squeeze in the chocolate sauce. I chilled the serving glass in freezer. Pour in the blended coffee and top with whipped cream (optional) and top with more choco sauce if desired.

  • You can make coffee ice by freezing the remaining decoction in the ice trays.Just 4 cubes enough for serving 2.
  • Ice cubes added while blending helps in giving you a frothy rich top over the cold coffee.
  • You can add some whipping cream in the coffee while blending itself for rich taste.
  • Coffee and sugar can be added according to your preference. Some like slight bitter, some like on sweeter side. So adjust according to your taste preference. If the coffee is too bitter, add more sugar and milk. If too sweet, milk and decoction.
  • I have used powdered sugar, you can use a simple syrup too. You can make simple syrup by heating sugar and water just to dissolve sugar and cool down. Use it as needed in the recipe. No need for consistency for this, just keep it simple.
  • Never use granulated sugar as it will not be dissolved in the coffee.
  • You can boil milk and add sugar to it, dissolve and cool it. I used raw milk. If fresh cow’s milk, better to boil and use.

Serve immediately. You can top with chocolate syrup or even coco powder.

Easy 2 ingredient chocolate mousse recipe

Easy eggless chocolate mousse recipe with just 2 ingredients. With just whipping cream and chocolate, this mousse simple and easy to prepare. I saw this one as a layer in another dessert and wanted to try the mousse alone for long time. And I thought this is a great time to try and post as Christmas is just 3 days away. I adapted this recipe from Betty Crocker. If you have still not decided any dessert for your Christmas party menu, then this could be the best while you prepare a wide spread. You can make ahead and refrigerate it.

I have kept it simple, you can also check out my chocolate cups and serve this mousse in the edible chocolate cups to make it fancy. Top with a sweetened whipped fresh cream or just with chocolate shavings, fresh fruits. Your choice. You can use dark chocolate, I used semi sweet chocolate chips and turned out delicious. This is eggless version too.

Easy chocolate mousse

Whipping cream/ heavy cream – 1 cup

Chocolate chips, semi sweet – 3/4 cup

Step by step method

  1. First we have to melt the chocolate. You can microwave for a minute or two, or use double boiling method to melt it. I chose the later. Boil little water in a pan. Place a bowl over it with chocolate chips (Not even a drop of water should be mixed in chocolate). Keep stirring with a spatula, until the chocolate melts. Keep aside.

  3. Beat the cream, I used my hand blender with whip attachment. I kept the container in freezer before using for the cream to form stiff peaks sooner. Keep whipping in medium speed until you get stiff peak.

  5. That is if you invert the container, the cream should not move/ drip. Check it by lifting the whip to see if it forms stiff peaks.

  7. Gently fold in the melt chocolate (warm, not hot). That is do not beat/ whip to mix. Just use the spatula and gently mix. Do not over mix.

  9. Spoon in to small shot glass or any of your small serving bowls and cling wrap it. Refrigerate for minimum 1 hour or until serving.

  11. I topped it with fresh cream and chocolate shavings.Step6-easy-chocolate-mousse


  • While melting chocolate, the bowl should be dry without even a drop of water.
  • The bowl should not touch the water boiling in the pan.
  • I kept the bowl in which I beat cream in freezer for quick results.
  • While mixing chocolate, it should never be over mixed for good light texture of the mousse.So fold it gently. Even if there are some streaks its okay.
  • The mousse can be refrigerated for 2 days.
  • I topped the mousse with fresh cream. I beat it until stiff peak, mix 2 tsp powder sugar/ icing sugar and a little vanilla. This has to be prepared fresh while serving.
  • Instead of semi sweet choco chips, you can use dark chocolate bars. It will give you dark coloured mousse.Chop and measure as in the recipe.
Serve cold with fresh cream topping and chocolate shavings, or simply chocolate shavings. Finally I made use of the chocolate scraper that Vj got me! chocolate-mousse-recipe

Eggless fruit cake recipe, Christmas fruit cake

Fruit cake recipe with lots of mixed dry fruits and nuts and spices. No rum soaking part or egg in this recipe.I love fruit cake we get in bakeries, past two years, I have been buying fruit cake loaf in the local bakery available here and love it. We get different rich and dark plum cake in Indian bakeries. In TN, we get this plum cake without any rum in it. Still it will be rich, dark and so flavorful that will be so different from the fruit cake we get here. If I crack that, will sure post it. This is very close to it and really delicious and rich fruit cake with nuts. I wanted to bake Christmas cake for a long time, but never got guts to try as I had no straight forward simple recipe. Every year, I browse for recipes, but somehow drop the plan. This year too, I started browsing for Christmas fruit cake a month before but ended up trying this much late.
I got this recipe with just few simple ingredients, self raising flour, dry fruits soaked in just orange juice overnight. I loved the idea of soaking in orange juice just for night. Later noticed it had no sugar in it. But since I am trying for first time I thought I should try the proper recipe with sugar in it. So I adapted the recipe a little from here and here. So took those 3 recipes and baked to suit my taste and convenience. I replaced egg with curd. I was not sure how it would turn until it got baked and until I tasted. It was really good as I buy from here. Aj too loved it sans nuts. He asked me to bake this again for his birthday without nuts.

Nutmeg powder – 1/8 tsp

Salt – 1/4 tsp

*I used 1/2 cup unrefined sugar, 1/4 cup brown sugar
**I used chopped cashew nuts and roasted almonds.

Lasooni dal tadka recipe, Easy dal recipes

Lasooni dal takda (Lahsuni dal tadka) is Indian dal cooked for rice. The main flavour in this dal is garlic, which is why it is called lasuni dal. Lahsun/ lasun means garlic. Lasooni dal is always our order when we go to Kailash parbat and Aj loves it. I make dal in all different ways depending on the ingredient available as well as time. Off late, it’s been a while since we went to KP and Aj is in holiday. He wanted dal and palak paneer for his lunch. So I thought will make this lasooni dal tadka for him and post it as well. Dal and steamed basmati rice has been my favourite too, but somehow after Aj started liking it and eating it, I have stopped eating. May be I got bored since I am making too often. I have made this dal with combination of dals, which can be your choice, like toor dal, moong dal, masoor dal. I added little urad dal and chana dal too. But it should be added in less proportions.

Mixed dal (Toor dal, moong dal, masoor dal) – 1/2 cup

Tomato – 1

Green chilli – 1

Turmeric – 1/4 tsp

Garlic, very finely chopped –2 tbsp

Coriander leaves, very finely chopped – 3 tbsp

Salt – as needed

To temper

Ghee – 2 tbsp

Cumin seeds – 1 tsp

Red chilli powder- 1 tsp

Garam masala powder – 1/2 tsp

Step by step method of lasooni dal tadka recipe

  1. I soaked dal for 15 mins before cooking. Chop tomato roughly and slit green chilli. Add to the dal. Add enough water(1 & 1/2 cups). Pressure cook for 4 whistles in medium flame.

  3. Mash it once done and add 3/4 cup to 1 cup water and bring to boil. Boil for 3-4 minutes or until dal turns creamy.

  5. In a kadai/ pan, add ghee, tadka (temper) with cumin seeds, followed by finely chopped garlic. once garlic is fragrant, add coriander leaves and switch off the flame. Add red chilli powder and garam masala powder to it.

  7. Give it a quick stir and add to dal.

  • I have made this dal with combination of dals, which can be your choice, like toor dal, moong dal, masoor dal. I added little urad dal and chana dal too. But it should be added in less proportions.
  • For easy cooking, especially when using chana and urad dal, soaking is must.
  • I recommend to use toor dal, moong dal and massor dal more and other dals less.
  • Take care not to burn the tadka (temper) as its the main flavour in this dal.
Serve hot with steamed rice and your favorite sabji. We had with palak paneer.

Jam coconut bread toast roll ups, easy bread recipes

Easy kids friendly snack or breakfast with bread, jam and coconut, rolled and toasted with butter. I love the combo of jam and coconut a lot as in honey cake. So wanted to try something easy with the same combo and ended up making this toast rolls. Also I wanted to try something like this as sweet bread toast rolls after I was tempted by French toast roll ups. This turned out yummy obviously with all the favourite items – jam, butter, bread and coconut. try this for a fancy weekend breakfast or snack for your kids. Everyone else at home too would love.

Rasam idli recipe, with rasam recipe

Rasam idli is a fusion recipe served in several restaurants in India as well as households. Though I haven’t tasted this one at restaurants, I came to know about this long time back through my friend sangeeta. But never tried at home. Last month, when we went to little India and had breakfast at Komala vilas, while I had masala dosa, Vj had this rasam idli. I didn’t taste though. But I thought I should make at home and blog rasam idli recipe. I thought instead of linking just idli batter and a rasam recipe and posting, I will post a version of rasam too, which you can make for rice too. This is very similar to what my mom in law makes rasam. Only difference is the rasam powder, she uses hers, while I used store bought. So what is the speciality?  She adds a dash of fresh coconut milk at the end for extra flavour. I thought this will be perfect for this rasam idli recipe as the rasam has to be flavourful as well as drinkable.rasam-idli-recipe

Kathal biryani recipe, Unripe jackfruit biryani

Kathal biryani is made with unripe, tender jackfruit which is known as pala moose in tamil. I have made it in pressure cooker. This kathal biryani recipe turns out spicy and delicious. The texture of pala moose goes well for a biryani.I am trying kathal biryani for first time. I have tasted this once in Punjab grill here in Singapore. It was really good, from that time, I wanted to buy and try it out. Finally made it few months back for Aval Vikatan. Everyone at home loved it.

Masala toast recipe, Iyengar bakery style

Masala toast is an open toast with a masala topping made with vegetables like carrot, capsicum, onion and tomato and spices. It is very simple to prepare and a great option for the kids snack. I have tried this once few years back, but somehow didn’t balance the taste, so turned out to be very bland with carrot’s boring smell dominating. After that I didn’t care to try. Yesterday, when I was browsing Instagram, I happened to see this masala toast somehow and looked really tempting. So made me try instantly and it turned out really flavourful and delicious. Vj too loved it.

This masala toast is a famous snack from Iyengar bakery, which I have never tasted before from there. This has various version and very flexible, you can add your choice of vegetables too, like potato, peas, cabbage, beans, beetroot which ever your kid’s favorite. But I guess Iyengar bakery has carrot, onion, tomato as main ingredients. So if you have not tried this toast, or forgotten for a while, make it and enjoy, perfect for this cold weather with a cup of tea!

Gingerbread men cookies, how to make eggless gingerbread cookies

Gingerbead men cookies is a must during the festival season / Holiday season. This is really flavourful and delicious with the spices we add in the dough. If you are looking for some eggless/ egg free Christmas recipes, this is a must try. Though I have this cookie cutter for around 3 years now, I have not dreamed to make this that much because always thought it was complicated. I have never read any recipe for this, or even tried reading. But this time when I was thinking what to post for this Christmas, I remembered this one and wanted to just browse the recipe for gingerbread man cookies. The ingredients is the reason I felt bit hesitant to try.
We have cinnamon powder, clove powder and mainly the ginger powder in this recipe. And most of the recipe calls for molasses. I decided to make everything from scratch. Because I know that the cinnamon powder, clove powder and molasses, will be kept as such in fridge, had no idea how to use it up. I am not a big fan of these stron smell spice powders.
I remembered seeing these powders in fairprice in small bottles, I felt it was bit expensive. Mustafa also has these spice powders, but the problem is they sell in large quantities. When I don’t even know what am I going to do with the small bottles, what would I do with those 250/500 gm packets. I will stay in my freezer for ever.
I remembered having cinnamon and cloves with me, so I powdered them finely and stored in small bottles. I had ginger powder already, so it was not a problem. I adapted the recipe partially from here. In place of molasses, I substituted it with out jaggery syrup and kept fingers crossed until I got whole cookies without breaking and tasted it.

Stuffed chilli bajji recipe | Stuffed milagai bajji

Bajji chilli / bajji milagai stuffed with a potato masala and made as bajji. Very delicious tea time snack.When we came here to Singapore, I used to make chilli bajji often, as we get bajji milagai in mustafa. Then really got bored of it and stopped buying. I wanted to try stuffed version of chilli bajji (stuffed chilli pakora, as this is popularly know by many). I once have tried making this but did not turned out proper. The chilli was not cooked at all. It was crunchy and no flavour/ taste in it.  So was not that eager to try again. Last time when I went for monthly groceries purchase, picked this pack of bajji chilli and thought of trying stuffed chilli bajji. So weekend I made this and even Aj had this one happily.

Kambu adai recipe, Bhajra, pearl millet recipes

Kambu adai recipe – bhajra, pearl millet spicy lentils adai recipe with step by step pictures. Healthy adai with millets and lentils combination. Bhajra or kambu is a millet I am buying for the first time (as grain) after Vj insisted me to buy. I had no idea what to make with it, but wanted to try. One of my reader friend (Swarna through Kasturi from UK) asked me to try adai with it and realized just to replace rice with bhajra/ kambu. I was really tempted to try. So tried this and loved the adai totally. It was crispy, tasty and nutritious too. great way to use kambu/ bhajra/ pearl millet. Do try this one if you want to include this amazing millet in your diet. Guilt free, tasty and healthy one.

Pearl millet/ bhajra/ kambu – 1/2 cup

Chana dal – 1/2 cup

Toor dal – 1/4 cup

Urad dal – 1/4 cup

Onion – 1

Ginger – 1/2 inch piece

Cabbage, finely chopped – 1 cup

Red chilli – 8

Asafoetida – 1/4 tsp

Curry leaves – 1 sprig

Mustard – 3/4 tsp

Oil – as needed

Salt – as needed


  1. Wash and soak kambu, chana dal, toor dal and urad dal for 3 hours minimum.

  3. First grind red chilli powder, salt, ginger and half the asafoetida to a coarse powder.

  5. Add the kambu and soaked dals drained from water. Grind coarsely with little water. You can make immediately or rest for 1 or 2 hours before making.

  7. Temper with mustard, asafoetida, curry leaves and sautee onion.

  9. Add it to the batter. Add chopped cabbage and mix.

  11. Heat tawa and grease with few drops of oil. Add little batter and make thick adai. Cook covered in medium flame and flip and cook for another minute until golden. Add oil as per your preference.

  • You can soak kambu/ bhajra overnight and add dals to it in morning, soak for 3 hrs.
  • Make sure to grind and break the kambu as it is a small grain. Or you can soak it separately and grind first before adding dals.
  • Do not ferment for more than 1 or 2 hrs. refrigerate after that.
  • You can skip tempering and add onion as such.
  • You can add few mint leaves as suggested by the reader friend. But I had no stock, so didn’t add. but it was fine without mint.

Serve hot, I loved it with naatu sakkarai and butter. You can have it with your favorite.
