Quinoa fried rice (Quinoa - fried rice style) | Quinoa recipes

Quinoa fried rice
Quinoa (Pronounce: KEEN-wah) cooked in fried rice style. How to cook quinoa in Indian pressure cooker and an easy recipe to start with. I have been seeing this for few years, but never thought to buy and cook. Two months back, Sangeeta asked me to try some quinoa recipes and I too thought I should try. So bought a pack of organic Quinoa and kept for trying something out of it. Now almost its been a month since I bought it. Finally I cooked it today! And I really liked it. Sure gonna try many more Indian (south Indian) dishes with this. So as a first step I thought of posting a simple fried rice style quinoa recipe that is easy to prepare. It’s not at all any complicated to cook quinoa, just like rice, have to wash it and cook with water in the ratio of 1: 2 – 1 part quinoa means, 2 parts of water. Simple, but when I wanted to cook, I was blank how to cook it in our cooker. So I am sure this will help who ever trying out to cook quinoa for the first time like me. Since I am going to try more dishes out of it, will post when I try different method of cooking – like direct pressure cooker without keeping in a container and electric rice cooker. This is very healthy as it’s rich in protein and many other nutrients. Diabetic friendly!

I have made it so simple without any sauces or anything, like my indian style fried rice. You can follow your the same with your favourite fried rice recipe, just replace rice with cooked quinoa.

  6. 3-wrap

  • Note that the wrap ingredient is only for 4, so double or triple as needed.
  • Kebabs can be made ahead and refrigerated before frying. Just fry when needed.
  • You can use lettuce too in the wrap. Using more vegetables can make the wrap more nutritious.
Serve with green chutney or simple with ketchup!

Apple Jalebi recipe | Easy Holi recipes

Easy and delicious apple jalebi recipe for Holi festival! I have tasted jalebi only twice from sweet shops. Though Jangri (Imarti) is my first preference, I love Jalebis too. I had this idea of posting apple jalebi for this holi. Very easy yet a rich sweet to celebrate the occasion. The fruity flavor from apple blends well in this sweet. I love the flavor that apple lends in any sweet. Yet, after apple custard, this is my next favorite one. we all liked it though we are tasting this for first time. I adapted the recipe from Tarla Dalal. You can refer my Jalebi method also to make the same recipe.

Vegetarian quesadilla with Zucchini, onion, capsicum, tomato and cheese as main ingredients. Last month, when we met Vj’s friend at ECP, we had our dinner at Patro’s. we all loved their food and this quesadilla was one of our orders and I decided to try it out later after my first bite. I love zucchini and cheese combo, already I have told this in my Spicy veggie pizza post. After that, I am liking zucchini in this quesadilla. Aj was not a big fan of my red bean quesadilla. But he likes this one. So I got zucchini last week and made for dinner along with pasta. Thought of posting here too and made it few days back. Vegetarian-quesadilla-recip
The first time, I could pull it off the same as the one we had, but when I made for blog, due to a slight nervousness!! with video ON, I slightly changed the method. So I have mentioned it in the steps, please do take a note of it. Otherwise, an easy snack for your kids. With summer holidays coming up,  you are sure gonna need this.

Sukku coffee recipe | How to make sukku malli kaapi

How to make sukku coffee without roasting - Full video and step by step pictures recipe. Sukku coffee is an appetizing and flavourful drink made with sukku (Dry ginger/ sonth) and coriander seeds (Dhaniya).
I always make sukku coffee without roasting and with just two main  ingredients. Very easy method and very refreshing drink. This is best home remedy for loss of appetite, indigestion, gastric problems etc. I have already posted another version with fresh ginger, this is also a similar one with dry ginger. This also helps in healthy weight loss if you have indigestion problems, through which you retain weight. You can have thrice a week, as too much can hurt your tummy. I felt like having this sukku kaapi last weekend after I bought this dry ginger for making Thirikadugam (Trikatu) for my kid. The aroma of sukku was just irresistible. As a kid, I have ran away from all these, but age matters. These days, looking after ourselves is a big task and keep looking for change in lifestyle to adopt a healthier one.
I have given with sukku (Dry ginger), but you can also use sukku powder we get in packets in shops.

How to make sukku kaapi video

Sukku coffee recipe

Recipe Cuisine: Indian  |  Recipe Category: Drink
Prep Time 10 mins    |  Cook time: 15 mins     Makes: 8 cups

Dry ginger, Crushed roughly – 1/2 cup

Coriander seeds – 1/2 cup

Palm candy – As needed

  1. Break the sukku to soften it. We cannot add as such in mixer, otherwise mixie will get spoiled. So I used my hand mortar and pestle for this.
  2. How to make sukku coffee step1
  3. Transfer to the mixer and just run it to powder it coarsely. No need to powder finely. This way the aroma is very different from using fine powder, I feel.
  4. How to make sukku coffee step2
  5. Add coriander seeds and again do not powder finely, let it be coarse.
  6. How to make sukku coffee step3
  7. Transfer this to an airtight container and you can use it for a month. To make a single serving, boil 2 cups water. Lower the flame.
  8. How to make sukku coffee step4
  9. Add 2 heaped tsp of this sukku malli powder (Dry ginger+ coriander powder) and let it boil in medium flame until it reduces to half.
  10. How to make sukku coffee step5
  11. Add palm candy (Panangarkandu) as needed to sweeten and let it dissolve. Switch off the stove.
  12. How to make sukku coffee step6
  13. Filter it through a metal strainer and transfer the sukku kaapi to the cup.
  14. How to make sukku coffee step7

    • You can make then and there too, instead of making the powder ahead. Just place a small piece of dry ginger and break it until soft in a mortar and pestle. Add 2 tbsp of coriander seeds and crush it too coarsely until aromatic. Proceed from step 4. I find this way, its more aromatic as we are crushing the ingredients than powdering.
    • You can use karuppatti (Palm jaggery), or jaggery or even honey (must be added only to luke warm coffee) to sweeten this coffee.
    • You can add a cardamom to make it more aromatic.
    • You can add little milk after you switch off the stove.

Aromatic, appetizing and refreshing sukku coffee! The whole house will be smelling divine when you make this and your family will be lured to kitchen to see what’s in the making👸.

Mor kuzhambu recipe | South Indian mor kuzhambu

Mor kuzhambu
Mor kuzhambu / mor kulambu recipe with Buttermilk (Mor), toor dal, coconut, ginger and green chilli as main ingredients. I already have a mor kuzhambu recipe which does not need any soaking part. It will help  you when you want to decide and make instantly. But then, that was a combination of few recipes. I have never ever made mor kuzhambu without cumin seeds (Jeera) and coriander seeds. Atleast I make sure to add jeera which I consider the main flavour in the mor kuzhambu next to ginger. But when my co-sis was staying here last year, she told that her mom makes a version of mor kuzhambu and will get the recipe for me. She shared the recipe last month and I tried it. It is with simple ingredients, yet flavourful.
I still have another version of mor kuzhambu that my mom and MIL makes that I love, I will post it sooner or later.

Recipe Cuisine: Indian  |  Recipe Category: Lunch
Prep Time 2 hr soaking time    |  Cook time: 15 mins     Serves: 4

Butter milk – 1 & 1/2 cups

Turmeric – 1/4 tsp

Salt – as needed

Vegetable – refer notes

To grind

Toor dal, Soak for 2 hrs – 1 tbsp

Rice, Soak for 2 hrs – 1 tbsp

Green chilli – 3

Ginger – 1/2 inch piece

Coconut – 1/4 cup

To temper

Oil – 2 tsp

Mustard – 1/2 tsp

Asafoetida – A pinch

Red chilli – 1

Curry leaves – 1 sprig

  1. Bring curd to room temperature and beat it smoothly using a whisk. If not beaten smoothly, chances are there to break while heating up. So make sure to beat smooth.
  2. Mor kuzhambu recipe step 1
  3. Soak toor dal and raw rice (I forgot to add)  in water 2 hrs prior. In a kadai, add few drops of oil and fry broken chilli and ginger.
  4. Mor kuzhambu recipe step 2
  5. Grind soaked toor dal, ginger, green chilli and coconut with little water to a smooth paste.
  6. Mor kuzhambu recipe step 3
  7. Mix it to the beaten curd, add turmeric, salt as need.
  8. Mor kuzhambu recipe step 4
  9. Mix well. Put it over stove and add your choice of cooked vegetable. I added seppankizhangu (arbi) here.
  10. Mor kuzhambu recipe step 5
  11. Heat the kuzhambu until it raises and becomes frothy, no need to boil it.
  12. Mor kuzhambu recipe step 6
  13. Temper with the items given under ‘To temper’ table and top the butter milk.
  14. Mor kuzhambu recipe step 7

    • Vegetable can be ladies finger, white pumpkin, chow chow, arbi (seppankizhangu), brinjal etc. Ladies finger should be sauteed in oil. Boil the veggies separately with salt until done and add it to the kuzhambu.
    • You can add urad dal vada (medhu vada) or even paruppu urundai in mor kuzhambu.
    • Mor kuzhambu can be stirred but cannot be poured while stirring using the ladle. That’s what my elders say as it may give you watery kuzhambu. Also they say, do not boil it covered with lid.
Serve with paruppu usili or potato curry the best combo for mor kuzhambu. I can have it as such with rice.

Palak kichdi recipe | Spinach kichdi

Dal kichdi with toor dal, rice and spinach as main ingredients. I wanted to try this green coloured kichdi for long time and finally today could find time to make this. I made it similar to my dal kichdi with slight variations. It was really delicious and had a hearty meal. Very easy and healthy too. Palak can be added chopped in this kichdi, but I wanted a greeny kichdi, so I made it as a puree and added it to the cooked rice and dal mixture. This is perfect comfort food, you can have it simply with pickle or papad or raita.

Hariyali aloo recipe

I bought a pack of coriander leaves from Mustafa last week as well as these small potatoes. Usually make small potato Biryani or schewan potatoes when I buy these. This time I wanted to try this hariyali aloo, as this was in my to try list for long time. I am not sure if this is also called chutney wale aloo. I adapted this gravy from Sanjeev kapoor’s recipe. Perfect for kulcha, roti and parathas too. This turns out tangy and spicy. Best when you have a bunch of coriander and want to use it up without wasting it.

Hariyali aloo recipe

Recipe Cuisine: Indian  |  Recipe Category: Side dish
Prep Time 10 mins    |  Cook time: 20 mins     Serves: 3

Small potatoes – 20

Coriander leaves – 1 cup

Mint leaves – 1/4 cup, loosely packed

Green chilli – 3

Onion – 3

Garlic – 6

Ginger – 1 inch piece

Cinnamon – 1 inch piece

Cardamom – 1

Clove – 1

Garam masala powder – 1/2 tsp

Turmeric – 1/4 tsp

Lemon – 1

Butter – 1 tbsp

Cream (cooking cream) – 1 tbsp

Oil – 1 tbsp

To temper

Oil – 1 tbsp

Bay leaf – 1

Cumin seeds – 1 tsp

  1. Cook small potatoes until done (Pressure cook for 2 whistles). Peel the skin and prick each with a tooth pick.
  2. 1-cook
  3. Heat a pan with 2 tsp oil, add cinnamon, clove and cardamom, followed by garlic and ginger. Give it a fry and add sliced onion and fry in medium flame until golden in colour.
  4. 2-fry
  5. In a mixer, grind coriander leaves, mint leaves and green chilli first.
  6. 3-grind
  7. Then add the sautéed onion with the spices. Grind smoothly with little water.
  8. 4-grind
  9. Heat little oil in kadai and roast potatoes until golden, keep aside. Heat remaining oil and temper with bay leaf and cumin seeds.
  10. 5-fry
  11. Add the ground paste and mix well. Add turmeric and butter to it. Fry for 3-4 minutes in medium flame.
  12. 6-add
  13. Add potatoes and salt to it. Add little water – 1/2 cup to 3/4 cup and mix well. Cook over medium flame.
  14. 7-add
  15. Lastly add garam masala and lemon juice and mix well.
  16. 8-ready

    • Do not add mint leaves more, otherwise it will over power the gravy. Add very less.
    • Lemon juice is main ingredient and cannot be skipped as it balances the gravy. Do not reduce quantity too. You will get raw green smell if not added as needed.
    • You can add curd (plain yogurt) too instead of lemon juice. You can add after step 6.
    • If green chilli is less spicy, add 4.
    • Pricking potato helps it absorbing the gravy better.
    • You can make the same with regular potatoes too.
Top with cream and serve with any hot flatbread. I had with chapati.
