Cucumber mint lassi recipe | Indian summer drinks

When it is summer, it’s always good to keep your body cool from inside. Drinking buttermilk is one way to do so. Being south Indian, we drink neer mor often. But these days for a change often have salted lassi as we both love the flavour. I have roasted cumin powder (bhuna jeera) always, so it’s really handy for me to add black salt, cumin powder and have the flavourful drink. I had one organic cucumber sitting in fridge for few days and I was thinking to try this one for a change. Got fresh  mint too, so added it to the lassi for refreshing taste. Vj is not a big fan of cucumber so I had myself all 😁.

Other summer drinks : Masala chaas, Masala coke, Mango lassi, salted lassi, sweet lassi, masala mor, ice lemon tea

Mango payasam recipe | Mango kheer

mango-kheer-recipe Mango kheer, a rich mango dessert with milk, reduced and thickened with rice, flavoured with saffron, cardamom and mango puree as main ingredients. For last mango season I tried mango kesari, and this mango kheer is my first try this season. I saw this recipe online in a Tamil newspaper website, as suggested by my relative and just followed it. It turned out to be delicious of course with all these exotic ingredients. Bought few alphonso mangoes from Mustafa, I guess still season has not yet come, it was ripen and yellow but not sweet. Vj always have mango as side dish for sambar sadam and curd rice, this time I thought I will make this mampazha payasam first.

Dragon fruit juice | Pitaya juice

dragon-fruit-juice-recipe Simple juice with red dragon fruit also known as pitaya fruit. I am very choosy when it comes to trying out new things. Though we are here for almost 11 years now in SG, I have not tried many things that’s available easily here. Right from food to these fruits. I have seen these fruits in wet market and grocery stores, but only once bought this fruit. Not the same variety but the white variety. I could not swallow the fruit with so many small black seeds in it. Even for Kiwi fruit it happened the same way. But these days I am used to it. I like kiwi fruit these days. Dragon fruit or pitaya, yet to get comfortable with. I made this juice to begin with, I liked to eat as such too. I am sure these days it is available in India too, you can try this one. pitaya-juice

Pasta in white sauce recipe | Kids pasta recipes

Penne pasta cooked and added to a smooth and creamy white sauce along with vegetables. Last month, a reader sent me a picture for tried and tasted and she said it’s pasta in white sauce. I told her I have not yet posted pasta in white sauce recipe in rakskitchen yet. She told she used my stove top mac and cheese recipe. I too have been browsing for pasta in white sauce recipe for long time and felt it is similar to this. Finally today time worked out for me to try this out. It was pretty easy, less cheesy and delicious too. I am sure this will be handy for you all in this Holiday season, either for evening snack or for dinner. Sure kids would love to have this delicious pasta. I made this and had little, kept the rest covered. Aj came back from school and tasted and told it is delicious and had it. I often make mac and cheese but wanted to cut cheese, so finally I got this one for him.

Watermelon kiwi popsicle recipe

Water melon and kiwi are two different texture, tasting fruits. I love watermelon and kiwi, so when I saw a picture in Pinterest while browsing and really loved the look of the popsicle. I was not sure about the taste. Last year itself I tried this combo but could not click. This year I tried and it was tasting really amazing as well. Aj is not a big fan of fruits, but he liked it this way in popsicle form. I too loved it. With summer in its peak, really feel like having something like this cold as before lunch snack. Kids must be having holidays in India and you will be busy cooking for them. Especially the mid day snack and evening snack is a big task. Popsicles can be very handy as you can make them easily as well as kids would love to have. You can make homemade popsicles rather than buying them and giving those artificial flavor and colored popsicles that are available commercially.

Tamil new year recipes, tamil varusha pirappu recipes

Tamil New year recipes - List of Tamil new year recipes. Mango pachadi, veppam poo rasam, payasam recipes, vadai recipes and more. Cooking time and preparation time may vary from recipe to recipe from 10 mins to 1 hr. Also check individual post for servings. I make not more than for 4 persons.

Check out the Tamil New year recipes. Neem flower (Fresh preferred – or use dried) can betempered in mango pachadi to include all the taste in one dish, on the first day of the New Year.
Other options (Consult elders at home about the veggies you can add for offering God)
Refer my post to get an idea on how to plan a full meal and prepare.
Tamil new year every year falls on April 14th. This is an Indian (south Indian) festival. It marks the first day in Tamil / Hindu calendar in the month of Chithirai. It is also known as Tamil varuda pirappu / varusha pirappu or Chithirai thirunal. Elders in home use the new Tamil panjangam from this day (Tamil calendar). We keep the New panjangam (with manjal kungumam on four corners) too in our prayer while offering food to God. We use this panjangam for determining the auspicious time for festival celebrations. We wake up early, take head bath and pray God. We decorate our house entrances with maakolam (Check out my mom’s kolams to learn), make a feast at home. We also visit temples. Many temples celebrate this whole month as “Chithirai thiruvizha”. Just like English calendar new year, we believe this day too as auspicious day for new and prosperous beginnings.
Wishing you all a very Happy and prosperous New Year! அனைவருக்கும் இனிய தமிழ் புத்தாண்டு நல் வாழ்த்துக்கள்
This is the first day of Tamil new year, its more important for us Tamil Hindus. Whichever country we are living in, we make sure to celebrate in our house holds the same way our mom and mom in law do. We want our kids too to know about these traditions and carry these traditions to the next generation.
We collect neem flowers through out the year from our backyard neem tree, dry it in shade and preserve it for the whole year. If fresh flowers are available, we use that new flowers for tamil new year day cooking. As a kid I never used to like the neem flower toppings in rasam and pachadi. I used to take out all the neem flowers patiently before eating and argue with my mom to not to add in those. My parents and grand parents used to explain me patiently about the importance of including all the tastes. They used to say it is healthy too.  But these days, I am craving for those as that bitterness is also a taste and one cannot explain the flavour that it passes to the dishes it is added to.
We prepare a full meals feast which has 2 types of pachadi, 2 types of vegetable side dishes, sambar, rasam, payasam, vadai and end with buttermilk.  We always include raw mango and neem flowers in the menu. Rasam is made with neem flowers and mango pachadi is a must, which is made with jaggery, raw mango and tempered with neem flowers – to include all tastes sweet, sour, spice, salt and bitterness. Meaning we should be prepared to face all moments in life and treat them equally.
Since this festival falls in summer, we make neer mor and panakam as well. How our elders have made the festival menu according to the seasons and things available that is also good for our health is quite astonishing!

Being a foodie I love the special dishes prepared on that day – Mango pachadi and neem flower rasam the best. I like vadai payasam too.

Moong dal pakoda chaat recipe

Moong dal is ground and made as pakoda, with which we make this delicious chaat. This has been in my phone sent by my friend Sangeeta. I have been waiting to get all the ingredients that she sent to make this chaat. But somehow I was not able to get all at once. I forget or it doesn’t happen. She sent me a pakodi chaat recipe that has moong dal pakodi, which is made with lots of spinach and mint leaves and all the spice powders. But here I have made a simple plain pakoda and made the chaat she told me. So here’s the recipe that I made in a simplified manner.

When I made pani puri post, I clicked that time itself to post this one, but some how was not satisfied with the clicks as well as I felt I should click when I make specifically Jal jeera. I used the same pictures for steps alone, but I made this drink last week. It’s very appetizing, aids in digestion as well. You need not wait for any season, just can make whenever you feel like.

Paal poli with rava | Paal poli recipe

Paal poli or paal poori is a simple milk based sweet with poori made with rava/sooji/ semolina, deep fried and dunked in sweetened milk. As a kid we used to eat chapati soaked in milk or even the regular wheat flour poori soaked in milk. When ever chapathi or poori is left over, mom soaks in milk and we have it as snack. Even my MIL does the same but only with poori. It’s their family favorite. I like the flavour of wheat poori soaked in milk. Paal poli is a fancy name given to this simple idea also a few more ingredients to make it special. We add cardamom, some nuts to the milk and the poori is either made with maida or with rava. I made this paal poli with rava. I saw this in my old cook book I am having, as paal poori. I have never made this fully with rava, this is the first time I am making. The cookbook suggested adding orange food colour. But I used saffron as these days afraid of using food colour. Since Vj is not a big fan of nuts and cardamom in anything, I used nuts just for click sake. This recipe can be altered by making the milk more flavourful with cloves and even edible camphor.paal-poli

White pumpkin juice | Poosanikai juice

White pumpkin (known as poosanikai in Tamil) juice with mint and coriander flavour, is not only a summer coolant but also good tasting. I wanted to try this when I heard from my parents that they have this everyday in empty stomach. I asked this recipe few times from them, but always some of the other ingredient would be missing to try. So this time I thought just will make poosanikkai as main ingredient and add the other ingredients that are available with me. Already its hot and I am sure everyone will be looking for drinks to keep yourself cool. Hope this would help. Refer notes for variations.
