South Indian brunch menu ideas

Podi idli, plain utappam, kuzhipaniyaram – savoury & sweet, keerai vadai, arisi paruppu payasam, sambar, coconut chutney and red chutney. I remembered something when I made this brunch. My mom had a brass plate that is called as “otrai idli thattu”  which means single idli plate which is a tiffin plate size, slightly shallow with holes in it. We have to use a cloth to line it and pour batter to it and steam like a regular idli. I have had many times excitingly. Most of the time I would not finish though. Now I can eat 2 such idlies. It is something similar to the thatte idli, except this one is not flat, but shallow and just a bigger variation of our regular idli. I wish I had that idli plate.
How many variations we can make with this single idli dosa batter. Good old regular idli, podi idli, cocktail idli, thalippu idli, kaima idli, chutney idli, idli upma… Plain dosa, masala dosas, beetroot dosa, onion uttapam, plain uttapam made in kadai as you see in this post, kuzhipaniyaram  and the list goes on with your creativity.
This post made after I got tempted by a photo that I saw in zomato under a restaurant review. The first thing I got tempted was the plain uttapam. Next is keerai vadai. Otherwise I changed the menu according to my convenience. I made this spread this friday, with vadai payasam special for aadi friday.
This post is just an idea for making an elaborate brunch, if you want to make it for some special occasion. Otherwise, you can take this as an idea and reduce the items according to your convenience. If you want to make this exact menu, note down the things that you can prepare and keep it ready in before hand to reduce your work.

Here’s how I prepared this brunch menu:
  1. Idli dosa batter can be prepared a day or two days ahead and kept in fridge. With this batter, we can make idli, plain uttapam and kuzhi paniyaram savory with the same batter. I had idli dosa batter with me.
  2. Same with sweet paniyaram batter, you can prepare a day ahead and keep refrigerated. I prepared the paniyaram batter the before day itself.
  3. I prepared keerai vadai by soaking urad dal just for an hour and grinding it coarsely without water. So soak it before you start all the other process for this brunch.
  4. Roast and pressure cook rice, dal for payasam in one container of the pressure cooker and dal for sambar in another container. (I keep tamarind also inside a small bowl in middle of dal for easy extraction of tamarind juice).
  5. Clean keerai and chop it, scrap coconut (I had it frozen), cut onion for red chutney, sambar, tomato and vegetables for sambar. Keep the other ingredients like coriander leaves, green chilli ready.
  6. Grind coconut, extract little milk and prepare coconut and red chutneys. Keep aside.
  7. Extract tamarind juice. Powder jaggery, cardamom for payasam and finish payasam.
  8. Now to stove work. In ghee, roast some cashews for payasam and garnish it.
  9. Temper chutneys and then sambar. Finish making sambar.
  10. Prepare keerai vadai.
  11. Lastly make idli, kuzhi paniyarams and plain uttapam hot. Just one each and couple of paniyarams will do as it will be filling.
  12. Coat the idli with sesame oil and idli podi mix and serve it. Arrange idli, keerai vadai, paniyarams, payasam and the side dishes. Finally keep hot uttapams and serve.
I made this keerai vadai, slightly different from the one I posted. This one is inspired from Chef Venkatesh Bhat's keerai vadai. That is I just soaked for an hour, ground really coarsely and added keerai, pepper, asafoetida and salt. Made thinly over a ziploc cover and fried in oil.
I made savory paniyaram with the idli dosa batter simply with mustard, urad dal, curry leaves and a dash of asafoetida.
Sweet paniyaram is karuppatti paniyaram, which I will post coming Wednesday.
I made my plain uttapams in my new iron kadai, which turned out super crispy, golden and tasty!

Vendhaya kanji recipe | Thengai paal poondu kanji

Vendhaya kanji or thengai paal kanji, poondu kanji is a porridge made with rice, fenugreek seeds (vendhayam/ methi seeds), moong dal, garlic and coconut milk. I guess it is called with various names. But we call it vendhaya kanji. We make this for breakfast, my  mom makes this version, while my MIL makes with out garlic and add grated coconut instead of coconut milk. I guess it can be properly called as vendhaya kanji. I make it mainly when someone at home has mouth ulcer as it is indication of tummy’s underlying condition too. And whenever we feel like 😉, as it is really tasty with all this coconut milk and garlic. The coconut milk, moong dal in this kanji heals any ulcer, so a perfect home remedy for mouth ulcer/ ulcer.
Last time when I was speaking to my MIL, she told she had made this for breakfast and I was so tempted to make. I make it often, but somehow never thought of blogging it. But my Co-sis insisted me to post it this time, so I got this post idea. My MIL told vadagam thogayal is the best combination for this kanji, so made that too. I will post the thogayal coming Monday😀.

Chocolate chia seed pudding recipe | Chocolate chia pudding

Easy Chocolate chia seeds pudding, simple ingredients, tasty and healthy too. Perfect to kick start a day with this as breakfast. I never knew such thing existed until I saw this idea in Instagram. It was really tempting. I too had chia seeds with me to use it up. Chia seeds are similar to sabja seeds that we get in India. It has lots of health benefits and has dietary fiber. I browsed for recipe and found one in Foodnetwork. This can be kept ready overnight in fridge and had in the morning for breakfast. I had for breakfast and it was really good.

Cheese dip recipe, for tortillas, crackers, chips

cheese dip
An easy cheese dip with simple ingredients. Goes well with chips, nachos, crackers etc. I made this couple of months ago when I made tortilla chips for kungumam thozi. I should have posted this long time back, but somehow missed to post it. I made this again when I needed a cheesy dip for the Italian paratha, my previous post. The cheesy dip with Italian paratha combo is what attracted me most and made me try Italian paratha. This went well with both the tortilla chips earlier and these Italian parathas as well! Simple and easy to prepare too. It is very similar to the way we prepare white sauce, but more cheese to make it's consistency needed for a dip. Adapted from here.

Butter – 1 tbsp

All purpose flour – 1 tbsp

Milk – 1/2 cup

Cheddar cheese, grated – 1/2 cup

Red chilli powder  – 1/4 tsp

Bird’s eye chilli – 1/2

Lemon juice – from 1/2 of a lemon

Salt – As needed


  1. In a pan, heat butter. Put the flame to low and add flour. Whisk gently to roast it.
  2. 1-melt-butter
  3. Once the raw smell goes off, add milk as you keep mixing.
  4. 2-add-milk
  5. Add red chilli powder, mix. Bring to boil (Keep the flame always low or medium).
  6. 3-add-red-chilli
  7. Add grated cheese and keep mixing until the cheese melts.
  8. 4-add-cheese
  9. Switch off the flame. Lastly add lemon juice and mix.
  10. 5-add-lemon


  • The flame should never be high, otherwise the dip will curdle.
  • You can skip lemon, but I like it tangy.
  • You can add Jalapeno seasoning if you want it smell like a nachos dip.
  • It gets thick as it cools down, so consume as soon as you make it. 
Top with chopped chilli or chilli flakes and some Italian seasoning to serve.

Italian paratha recipe | Italian herbs paratha

Italian paratha
A simple paratha, with Italian herbs in it, can excite your kids, especially with a cheesy dip! I grabbed this idea when I was browsing Instagram, one of the restaurant serves this, but I was not sure if it was stuffed or simple paratha. I decided to just make it in the same way as lachcha paratha. If you are a beginner and still want to try this one, just add it to the flour and make it like regular chapati. Or little fancier, you can do it as triangle paratha too.

A simple paratha, with Italian herbs in it, can excite your kids, especially with a cheesy dip, Step by step and full video post!


Wheat flour – 1 cup, heaped
Oil – 1 tbsp
Italian seasoning – 1 tbsp
Salt as needed
Ghee – as needed


  1. In a mixing bowl, add wheat flour, salt and oil. Mix well. Add water (Approx.1/2 cup, depending on your flour plus or minus 1 tbsp) to make a smooth dough. It should not be sticky, so add water carefully.
  2. Italian paratha step 1
  3. Set aside for 1/2 hour minimum. Knead well after 1/2 hour to make it smooth. Divide into 5.
  4. Italian paratha step 2
  5. Roll to smooth balls. Flatten and dust it with flour.
  6. Italian paratha step 3
  7. Roll into thin discs as we roll for regular roti. Drizzle one or two tsp of ghee over it and sprinkle 2 tsp wheat flour.

  9. Spread well with your hands. Sprinkle Italian herb and spread evenly.

  11. Roll tightly. Using a knife, slit the rolled roti to two, leaving one side intact, as shown below.

  13. Coil this slit roti as shown in the picture. Make sure you coil it firm (not loose).

  15. Dust slightly and roll gently to thick parathas.

  17. Heat tawa, drizzle some oil or ghee and cook parathas over medium flame. Gently press while it gets cooked, for even cooking. Cook both sides by flipping, until golden brown spots appear.

  19. Repeat to finish and stack the parathas. Once done, tap the sides and in the middle gently with your palm/ fist, to highlight the layer.

  • Do not make sticky dough, otherwise you won't get the layers properly.
  • Spreading ghee and flour in step 3 is must for getting layers.
  • If you want you can use oil in place of ghee.
  • While coiling, twist as you coil, instead of coiling as such. This way you will get layers spread all over, and not just stacked.
  • I used oregano seasoning we get while we order pizza. You can use any of your favorite Italian seasoning or even mixed seasoning.
  • While cooking, make sure to cook in medium flame to get crispy golden parathas. If cooked in high flame, it will be soft as well as some part in the middle may remain uncooked.

Kara chutney recipe | For dosa, idli

Spicy kara chutney recipe with onion, tomato and both green red chillies and black pepper for extra spiciness.  I always make onion tomato chutney with coconut if I am making. But last week when I saw a video, I was tempted to make something spicy that is served in roadside shops as kaara chutney, that is slightly watery. And ended up with this chutney. This was super spicy, just the way I wanted. This should be handy when I have no coconut in hand. Perfect for idli and all types of dosa.

Kadapa karam dosa | How to make kadapa karam dosa

Kadapa karam dosa is made by spreading a spicy red chutney (kara chutney) and besan chutney (Bombay chutney / kadlaimavu chutney) over thin crispy dosa. I have linked the detailed recipe for dosa and besan chutney, so please refer the individual posts for the recipes. Otherwise I thought I should post this idea when my BIL forwarded this recipe from a friend (who had shared arbi chips earlier, Thank you Smitha), as I was way too tempted by the name itself and the thing that I had dosa batter in hand. This is so easy to make too. I am sure many of you will be pushed to try this one soon. Since writing all the recipes in one post will be too long and also I already have these recipes, I am linking to those posts.

Also many people including me are tempted towards the spicy karam chutney that is spread over masala dosas like mysore masala dosa. And here in this karam chutney shared by her, ingredients are simple and can be prepared in a jiffy. I would say this kadapa karam dosa itself is a simpler version of mysore masala dosa. You will be amazed by it's taste. This is also called erra karam dosa I guess. I am not sure though. And the kadapa in this is different from Kumbakonam Kadappa.

Kadalai mavu chutney recipe

Prep Time: 10 mins    |  Cook time: 15 mins     |  serves: 3


Kadalamavu (Besan) - 3 tbsp

Onion – 2

Tomato – 1

Green chilli – 4

Ginger, very finely chopped - 1 tsp

Water - 2 & 1/4 cups

Salt - As needed

Ghee - 1 tsp

Coriander leaves, chopped - 2 tbsp

To temper (See notes for more options)

Oil - 1 tbsp

Mustard - 3/4 tsp

Urad dal - 2 tsp

Chana dal- 1 tbsp

Curry leaves - 1 sprig


  1. Slice onion, chop tomato, slit green chilli. In a mixing bowl, dissolve besan by adding little water first to make a paste, then add the remaining water and keep aside. Heat a pan with oil/ ghee, temper with the items given under to temper table. (Shown below is with fennel seeds)
  2. 1-chutney
  3. Add onion, ginger and fry till transparent. Add the chopped tomatoes, required salt.
  4. 2-onion
  5. Fry until tomatoes turn soft. Add the dissolved besan slowly as you keep stirring. Bring to boil. If gets too thick, add little more water.
  6. 3-tomato
  7. Simmer for 4-5 minutes or until the raw smell goes away and the consistency is thick like poori masala. Garnish with chopped coriander leaves, ghee.
  8. 4-ready


    • You can also temper a small piece of cinnamon and clove.
    • Also you can temper with fennel seeds. I updated the recipe with the tempering items as I found that more tastier than fennel. So it's your choice purely.
    • Adjust water consistency as needed. 2 & 1/4 cup was perfect for me.
    • Don’t skip ghee, just 1 tsp at the end also enough.

Eggless banana chocolate chip pancakes recipe

Banana and chocolate is a super hit combo we all know. Simple and easy eggless banana chocolate chip pancake recipe. So wanted to try this out for a long time. Yesterday had this single banana, that has become extra soft and last 1/4 cup of chocolate chips. I know this is the right time to try this out. Sure will be kid’s favourite with chocolate in it. Banana makes it really soft and fluffy. I have made this with self raising flour. But you can replace with all purpose flour/ maida + 2 tsp baking soda + 1/8 tsp salt. You can try with our atta too. Just keep the batter consistency like idli dosa batter. It will turn out great.eggless banana chocolate chip pancake

Self raising flour – 1 cup

Banana – 1 (Long variety)

Chocolate chips – 1/4 cup

Milk – 3/4 cup + 3 tbsp

Oil – 1 tbsp

Brown sugar - 2 tsp

Salt - 1/4 tsp

Butter to grease

  1. In a mixing bowl, place the peeled banana and mash it well. Add flour, sugar, salt, oil to it.
  2. Mash
  3. Add milk and using a whisk, make a smooth batter. Lastly add chocolate chip and gently mix.
  4. Mix
  5. Heat a pan, once hot, switch off the stove and let the pan come to moderate heat. Again switch on the heat in medium, pour 1/4 cup batter over greased pan. No need to spread. You can either cook covered or open, wait until bubbles pop everywhere on the pancake surface top. Roughly a minute.
  6. cook-
  7. Flip and cook for a minute and repeat to finish the batter. Stack it until serving.
  8. Ready


  • I have not used baking powder since it is self raising flour, but if using maida, make sure to use 2 tsp baking powder.
  • Do not grease with more butter.
  • Adjust the milk quantity to get desired consistency of batter. Especially when using wheat flour.
  • Use milk at room temperature.
  • If pan is too hot, the shape of the pancake will not be good as well as it wont be evenly browned/ cooked. So keep the heat always in medium.
  • Do not over mix after adding chocolate chips.
  • If the banana is too small, use two.

Serve stacked with butter and honey topped generously!

Potato pepper fry recipe | Spicy small potato pepper fry

An easy, spicy and tasty potato pepper fry with all the spice to turn up the heat in this recipe. Once we tried this for snack and from then hooked to the recipe and making it often in place of the regular potato curry. This is so much easier than the regular one, coz no need to wait for the potato fry to get roasted. This is just matter of tossing few ingredients together. Garlic and chilli are always great combo, that too with potato, it just turns to be a hit. We like it super hot and spicy. Adjust the spice according to your level and this will be your favorite too. I like small potato's texture in this recipe than our regular potato, but still you can use regular potato. I have used sesame oil so that the spiciness doesn't affect your tummy.

Small potato – 15 – 18

Garlic – 8 flakes

Red chilli – 1

Green chilli – 1 (Optional)

Red chilli powder – 3/4 tsp

Black pepper powder – 1 tsp

Salt – As needed

Sesame oil – 2 –3 tbsp


  1. Pressure cook small potatoes with enough water to immerse it, upto 3 whistles.Very finely chop garlic and green chilli if using.
  2. Heat a pan with oil. Using a kitchen scissors, cut the red chilli into thin circles over oil in low flame. Give it a stir and add garlic, green chilli and cook for a minute until garlic turns fragrant. Add red chilli powder and 2 tbsp water to oil (You can make a paste first and then add to oil).
  3. Potato pepper fry step 1
  4. Cook over low flame until oil separates. Add black pepper powder, salt and give it a mix. Add the potatoes.

  6. Toss well to coat. Cook for 2 minutes in medium flame. Switch off the flame. You can top with more pepper powder if you want.

  • Adjust black pepper powder as per your spice level.
  • You can add a tsp of soya sauce before adding potatoes.
  • You can add finely chopped coriander leaves to this.
Serve as accompaniment for rice or you can have it as such. We love it as such!
