Kadai vegetable recipe
Kadai vegetable preparation in easy method with Punjabi garam masala, other spices making a wonderful accompaniment for Indian flatbread, mild pulaos.
I love kadai paneer very much and wanted to try Kadai vegetables for a long time. I am not sure why I have not tried this earlier as I know Aj loves mixed vegetables very much. When I was thinking what to make the other day for lunch for Aj with Dal, I thought I will try kadai vegetables and make post too if it turns out well. It turned out really good and Aj too loved it. Sure adds to the list of favorite vegetable side dishes I make.
Vegetables can be added according to the availability, especially vegetables like beans, carrot, peas and cauliflower. You can add baby corn like me. Experiment adding sweet corn, broccoli and few paneer cubes too according to your preference. I added Punjabi garam masala here, but you can also add regular garam masala.
Main thing while preparing kadai vegetable is to cook the vegetables just right, retain the crunch of the vegetables. Adding butter for frying adds more taste as well as calories😉😁, it's up to you.

I make vegetable cutlet most of the times, but never made aloo tikki as snack. Though I have made it for ragda pattice chaat, never made it alone. Aj keep asking me to make it, but somehow, I never made it. It is so very similar to the stuffing I prepare for aloo paratha. I make aloo paratha very often for Aj's lunch box. I just cook my potato in microwave as it gets cooked easily in couple of minutes, as well as no water retention in potato. This makes rolling easy.
So followed the same method of cooking potato in microwave for preparing aloo tikki too. We can add few ingredients more in addition to the basic aloo tikki I have posted here. But I like to keep it simple and easy.

Potato - 4
Corn flour (corn starch) - 2 tsp
Green chilli - 3
Coriander leaves, chopped - 3 tbsp
Amchoor powder - 1/2 tsp
Cumin (roasted & powdered) - 1/2 tsp
Salt - As needed
Ghee or oil - to shallow fry


  1. First wash and clean potato. I cooked my potato in microwave method. You can follow the way you usually cook potato too.
  2. To cook potato in microwave, prick it with a knife or sharp item in few places*.
  3. Cook for 4-5 mins in high power turning the potatoes in between every one minute.
  4. Once done, let it cool down. Peel the skin and cut roughly. Mash with a potato masher without any lumps.
  5. Add corn flour, very finely chopped green chillies, coriander leaves, amchoor and cumin powder, salt. Mix well.
  6. Divide into equal sized balls (8-9). Flatten between your hands.
  7. Roll the sides to make it even. Repeat to finish all.
  8. Heat a pan and add 2 tsp of oil or ghee. Arrange the patties over the tawa and cook over medium flame.
  9. Cook both sides until it turns deep golden in colour.


  • Pricking potatoes in few places ensures steam escaping the potato while it cooks.
  • Corn flour is added for binding. You can even add 1/4 cup breadcrumbs in place of corn flour  if you do not have corn flour. 
  • Deep frying gives even browning of outer layer. But make sure you mash the potatoes evenly to avoid disintegrating in oil.
  • If you are deep frying nad it dissolves in oil, then too much water content in the patties or less binding agent. Add more corn flour/ bread crumbs to knead again and try.
  • You can add red chilli powder for more spicy tikki.

I make both deep fried version and baked version. Baked version is very rare as I don't have patience to pre-heat, wait for sometime to get the wedges ready. Deep fried are usually quick to whip up and you will have in your hands in less than 30 mins.

About couple of years back mom in law asked me to try this pori upma along with few other recipes she told me over phone which she learnt from Tv cookery shows. I noted all the recipes in my laptop notepad and it was as such these many years. When I bought a pack of pori for last years karthigai deepam, I knew I would never use this pori for karthigai deepam fully, still got for using it for snack items. I wanted to post that time itself as many would have the puffed rice in stock. I usually use it by making kara pori, which is my favorite, or even a simple bhel with the ingredients I have in hand. But I saved pori for trying out this pori upma. When my mom in law was here, she used to keep reminding me about this pori upma.

Rumali roti is super thin roti, meaning as thin as handkerchief and can be folded easily like a cloth. I love rumali roti, both taste wise and also the recipe has all simple ingredients unlike naan or kulcha which involves yeast or cooking soda to prepare. It is not heavy when had, as I make with major wheat flour ratio than maida. Also no butter.
I made it with water, but you can use lukewarm milk too for more softer results. Some videos I saw had cooking soda too, but I don't think we really need it. So I adapted the recipe from Vah chef which is easy. I adapted an easier method though, for my convenience. I did tried cooking the rumali roti over an inverted kadai and saw, but the kadai I have is copper bottom and I could not get a softer result. So I did in tawa itself, so if you are also trying first time like me, can follow this same way.

I tasted rasam vadai once or twice in restaurants. Otherwise make rasam vadai with leftover ulundhu vadai medhu vadai and left over rasam. Once in a family function at home, the cook who came to our home forgot to add salt in paruppu vadai. So we added the vadas in rasam. It turned out really good. I have not made rasam and vadai exclusively for making rasam vadai. Couple of years back when I posted a rasam vadai picture in facebook, few readers asked for recipe, but I already have posted lot of vadai varieties like sambar vadai, thayir vadai, cabbage vadai, keerai vadai all with ulundu vadai.

So when recently started seeing bonda rasam in instagram posts by friends, I really got tempted. A reader friend also suggested to post rasam vadai. But somehow I wanted to make it with paruppu vadai. What I saw in Instagram as bonda rasam is probably with urad dal bonda. I decided to do it with paruppu

Onion tomato chutney with ginger and dry coriander seeds flavour. I have added tamarind for extra tangy chutney that goes well with idli, dosa. Full video, step by step preparation.
I somewhat do not like coriander seeds smell in certain recipes, like I have mentioned in capsicum rice and one more recipe is this chutney. But my recent visit to a restaurant changed my liking towards the combination of ginger and coriander in this onion tomato chutney. I have tasted this chutney several times when my mami made and used to not like much. I even request her not to add ginger in onion tomato chutney. Aj and Vj too not big fan of this ginger onion tomato chutney.

Zucchini carrot paratha is a healthy and filling lunch box idea you can pack for your kid or even your family, yourself. Easy to prepare as no stuffing business as we are adding grated vegetables in this.
Zucchini is the only new favorite vegetable we all started liking after coming to Singapore. I add in pizza, make zucchini fritters, add in quesadillas etc. I wanted to try rice and paratha for long time and tried this few months back. It turned out good but I had it myself. So yet to try again and give Aj and Vj. But I am sure they both would like it as there's nothing to not like in this. Do try if you too like zucchini. I added carrots to make it colourful.
